1. Opening the sugya —

↩ Detailed explanation (level 1)

The yesod — נטל״פ derived from the גר

The yesod of the siman is the principle נותן טעם לפגם מותר: an issur that imparts to the mixture nothing but a spoiled taste does not render it forbidden. The Taz gives its source in his very first ס״ק, from the verse that speaks of neveila: a neveila still fit to be given to the גר (the resident) is called neveila and is forbidden; one no longer fit for him, already unfit for a person to eat, is not included in the term. Hence: a taste that spoils the mixture has the status of a neveila that has become unfit, and it does not forbid. Nor is it required that the mixture actually become inedible: it is enough that its taste is spoiled there.
The two figures of spoiling: two pictures in the language of the Mehaber — (a) a thing whose taste is spoiled of itself, which is not fit to be eaten even on its own; (b) a thing which, on its own, is מוטעם ומשובח — tasty and improved — yet which, having fallen into this mixture, spoils its taste. In both cases it is permitted, for we follow only the effect actually produced in the mixture: once the outcome is a spoiled taste, there is no "taste" here that forbids.
The gloss of the Rama — בריה and דבר חשוב: the heter of נטל״פ holds only for a thing that has no חשיבות of its own. But a בריה — and everything that is not nullified, in simanim ק׳ and ק״א — if it is not spoiled in itself, is not nullified at all, not even in a thousand, even though it spoils the dish: its חשיבות blocks the nullification.
The Rama himself refers, in parentheses, to the The Shach names the cases intended, and the Taz says why חשיבות here weighs more than the spoiling.

2. The root of the chakira — why a spoiled taste is not a "taste"

↩ Detailed explanation (level 1)

This is the foundational chakira of the whole siman, and all its branches depend on it.

The chakira — טעם כעיקר דאורייתא, and what of a spoiled taste? We hold that טעם כעיקר דאורייתא: the taste of the issur absorbed in the permitted forbids as though the issur itself were present in substance. Why, then, does a spoiled taste not forbid? It is a taste nonetheless. There is room to inquire: is נטל״פ a disclosure that there is no name of issur here at all — the thing having left the category of food — or an external heter that permits a taste which genuinely exists? The question stands open; what follows shows which way the Shach leans.
The Shach's resolution (ס״ק ג): the Shach writes, in the name of the תורת חטאת, that there is no room to distinguish between an issur that is נמחה — dissolved — and one that is not, since טעם כעיקר דאורייתא; but that a spoiled taste is not reckoned a taste at all.
And he draws the consequence at once: if the taste does not count, the body of the issur itself is nullified in a majority.
נטל״פ is therefore not a heter laid over a taste that exists: rather, the Torah forbade only a taste that improves or that remains edible, and a taste that ruins has left the category of "imparting taste" altogether.
The edge of the chakira — "neither improving nor spoiling":
The caseThe dinSource
It spoils (slightly or greatly) Permitted — it does not forbid its mixture Mehaber seifim 1 and 2
It improves It forbids — sixty are required
Neither improving nor spoiling (no taste at all) Forbidden — and sixty are required Shach
The Shach's proof (ס״ק ב): the Shach first states the rule, then proves it from the sinew — the גיד — which we hold imparts no taste at all, and which nonetheless requires sixty to be nullified once it has dissolved.
We learn from this that the heter of נטל״פ is not the absence of taste, but precisely a taste that spoils in fact; and its root is in the Yerushalmi, which the Shach quotes in its own words.
The shita of the Rashba (Shach ס״ק ה): where the issur leaves only אלא טעמו בלבד — its taste alone, without substance — then even if it fell into a smaller quantity of permitted food, one discards the body of the issur and the remaining broth is permitted, since the spoiled taste within it does not forbid.
This is the yesod of the end of seif 2 in the Mehaber, to be read in the next section.

3. The measure of spoiling — taste against ממשות, and ציר as the body

↩ Detailed explanation (level 1)

The text of the Mehaber (seif 2)

The yesod — taste against substance:
A foundational distinction, bearing on the measure of spoiling required:

• When the issur has a ממשו של איסור — a substance — and is the larger part (or even half against half), slight spoiling does not suffice: it must spoil completely, until it is no longer fit for a person to eat.
• When there is nothing of the issur but אלא טעמו בלבד, with no substance, slight spoiling suffices, even where the issur is the larger part and the permitted the smaller.

The root of the distinction: the substance of the issur joins in forbidding, without depending entirely on the quality of the taste; but a taste without a body rests wholly on the working of the taste, and the least spoiling undoes it.
ציר counts as the body — the Taz's dikduk (ס״ק ג): the Taz notes that ציר — the liquid that issues from the issur — counts as the body of the issur, not as "taste alone". The Shach records the same, in the name of the Tur in the name of the Rashba.
And the nafka mina is stated by the Taz himself: ציר of issur mixed into the permitted requires either complete spoiling or a majority of permitted food.
"Substance", then, is not only a piece: it is also the liquid that comes out of it.

4. The חוכך, השביח ולבסוף פוגם, and the pot

↩ Detailed explanation (level 1)

Three sharp dikdukim branch out of the continuation of seif 2 and of the Rama's gloss.

The text of the Mehaber and the Rama (continuation of seif 2)

The break marked by "…" stands, in the source, for the gloss [נ״ט] at the first point, and for the citation (שם בארוך) at the end — the איסור והיתר הארוך, from which the Rama draws this gloss.

The חוכך — the benefit of added quantity (Taz ס״ק ד): "יש מי שחוכך" denotes one who inclines toward stringency: even though the issur spoils the taste, if it has increased the quantity of the permitted food to the point that the one eating gains more from the added measure than he loses in taste, then on balance he improves — and it is forbidden. The chakira is here: is "spoiling" measured by taste alone, or also by the benefit of quantity? For the חוכך, the benefit of the added measure joins in and undoes the name of "one that spoils".
From beginning to end — the Taz's dikduk (ס״ק ה): במה דברים אמורים שפוגם מתחילתו ועד סופו (שולחן ערוך יורה דעה ק״ג:ב) — all this holds only where it spoils throughout. But if it improved first and spoiled only at the end, or the reverse, it is forbidden. The Taz brings the Tur's example: vinegar of יין נסך that fell into cold groats, improving them at first, then heating them and spoiling them.
And the reverse case — spoiling first and improving at the end — is vinegar falling into boiling groats and cooling them; that one is forbidden all the more.
The sense of the din is that at the moment the issur improved, the dish was already caught, and the spoiling that came afterwards does not restore it to its permitted state: נטל״פ requires continuous spoiling from the outset.
The pot and the spoon — נ״ט בר נ״ט דהיתרא (Taz ס״ק ו):
The caseThe dinThe reason
The issur spoiled the dish directly The dish is permitted, but הקדירה אסורה The pot absorbed the issur itself
He stirred with a spoon, then put the spoon into a second dish (which it also spoils) The pot is not forbidden
The cauldron in which honey is melted, with the bees' legs It is not forbidden There is no taste in it at all
Explanation — נ״ט בר נ״ט (Taz ס״ק ו): when the issur spoiled the first dish directly, the pot absorbed from it and becomes forbidden. But when it is the spoon that absorbed the spoiled taste and then gave it to a second dish, which it likewise spoils, we have a second taste of spoiling — the faintest of the faint — and the pot is not caught by it.
The Taz indeed wonders at the Rama's wording, which required two spoilings where one would do: even had the spoon been caught by an outright issur, once it spoils the dish into which it is put we have נ״ט בר נ״ט.
As for the honey cauldron — where there is no taste at all, the bees' legs imparting none — it goes without saying that it is not caught.

5. An issur that spoils only with help — salt and spices

↩ Detailed explanation (level 1)

The text of the Mehaber (seif 3)

The break stands, in the source, for the variant (בטור מרובין): the Tur reads מרובין — "in quantity" — where the Shulchan Arukh reads מדוכין, "pounded".

The yesod — we follow the outcome:
The chidush of the seif: we do not look at the power of the issur taken by itself, but at the actual outcome in this pot. Since, joined to the salt and to the abundant pounded spices, the issur turns out to spoil in fact — it is permitted, even though without that help it would have improved. "נותן טעם לפגם" is therefore measured by the whole that lies before us, not by the abstract power of the issur.
And likewise in reverse — the Shach (ס״ק י״ב): the Shach adds the symmetrical case — where the issur spoils only because there is no salt or spice present, and would not have spoiled had the seasoning been as it should. That too is permitted, since as things stand it spoils.
This is one root with the din of seif 1: the whole matter of נטל״פ is measured by the real outcome in the mixture, and not by the power of the issur taken apart.
Connection to the chakira of "neither improving nor spoiling": and one must look closely — all this holds only where the conclusion is spoiling. But if the help produces "neither improving nor spoiling", the din of ס״ק ב returns (section 2 above): it is forbidden until sixty, there being no spoiling here to permit.

6. Oil and honey of a non-Jew — oil נטל״ש, honey נטל״פ

↩ Detailed explanation (level 1)

A short seif on which a long and deep machloket in the Shach depends.

The text of the Mehaber and the Rama (seif 4)

The break carries the source of the "יש אומרים" — (מהרי״ל בהגהת ש״ד סימן כ״ב ועוד הרבה פוסקים עיין ס״ק י״ג); and the end of the seif refers to the (הגהות אשיר״י פ״ב דעבודת כוכבים).

The root of the long Shach
The thingWhat the meat doesThe din
Oil It imparts a taste לשבח — one that improves Its permission rests on another ground
Honey It imparts a taste לפגם — it makes it rancid Permitted on the ground of נטל״פ
Boiled oil There too the taste improves It does not become forbidden
The Shach's dikduk (ס״ק י״ג–י״ד): the Shach goes at length — following Tosafot, the Rosh, the Mordechai and the איסור והיתר — to distinguish oil from honey. In oil, all agree that the meat imparts a taste that improves, so it cannot be permitted on the ground of spoiling: its permission rests on another ground, for the vessels of a non-Jew are not presumed בני יומן.
In honey, by contrast, the meat makes it rancid and spoils it: its permission is therefore literally that of נותן טעם לפגם. And so it is even for boiled oil.
This settles the wording of the Mehaber, who bound the two together although their grounds differ.
The Rama's gloss — the honey itself, or the drink made from honey (מהרי״ל):
That is: there is a dispute whether the meat makes the raw honey rancid, or only the drink made from it; and therefore, where there is no great loss, one should be stringent.
The Taz (ס״ק ז) brings here the Beit Yosef's question — honey is commonly cooked with meat and the result is excellent — and his answer, that the improvement comes from the spices and the onions; he then holds the מהרי״ל's distinction to be the main position.
Meat or milk in wine (Rama; Pitchei Teshuva
for the wine spoils them. The Pitchei Teshuva records the discussion over the word חלב — is it to be read with a tsere, meaning fat, or with a kamats, meaning milk? — and brings the בית יהודה, for whom both readings impart a taste that spoils.

7. בת יומה and מעת לעת — a rinsed pot, fat on the surface, and חורפא

↩ Detailed explanation (level 1)

The text of the Mehaber and the Rama (seifim 5 and 6)

The Rama gives his source in parentheses: (או״ה).

The yesod — בת יומה and מעת לעת:
Taste absorbed in a vessel degrades as it stands there; hence:

• within the מעת לעת — the twenty-four hours — following the cooking, the vessel is בת יומה, its taste is still good and it forbids;
• after that period it is no longer בת יומה, its taste is spoiled and it does not forbid.

And there is a condition: that the pot be rinsed, with no fat remaining on its surface.
Fat on the surface does not spoil — the Taz's dikduk (ס״ק ח): what is on the surface does not spoil, even after several days; only the taste absorbed in the thickness of the vessel degrades. This is the shita of the Rashba, and it is why rinsing is required: what lies on the surface counts as a whole piece of issur that has not been spoiled.
The "יש מתירין" of the Mehaber is the Ran, for whom even what lies on the surface spoils; and we hold like the first view.
The Shach (ס״ק ט״ו) draws the same division, and adds that the requirement of rinsing applies only where it is known for certain that the pot was not clean.
Cooking before rinsing · sixty against what is stuck on:
The shitaThe dinSource
The Mehaber (unattributed) If he did not rinse and cooked — it is forbidden (the fat on the surface) Mehaber seif 5
Permitted even if he cooked before rinsing Mehaber seif 5
The Rama (או״ה) — there is sixty against what is stuck on לכולי עלמא שרי — all permit, the pot not being בת יומה, "וכן נוהגין" Rama seif 5; Shach ס״ק ט״ז
The Shach notes that the מהרש״ל disputes this last point, and he rejects his reasoning.
חורפא משוי לשבח (seif 6; Taz ס״ק ט): "יש מי שאומר" — if one put שאם שמו פלפלין, pepper, into a pot of issur that is not בת יומה, everything is forbidden, for its sharpness restores to the spoiled taste the quality of a taste that improves.
The matter calls for examination: sharpness does not merely season, it turns the spoiled into an improvement. And the Taz specifies that a majority of sharp matter is needed to effect that turn, referring to siman צ״ה and siman צ״ו.
The Mehaber adds, in parentheses, that this is the ruling the Beit Yosef reached on his own in his בית יוסף.

8. A pot of meat and milk, then water —

↩ Detailed explanation (level 1)

The text of the Mehaber and the Rama (seif 7)

The yesod — חתיכה נעשית נבילה and the water:
In a pot that has absorbed בשר וחלב, the absorption itself has become an outright issur — a "neveila". Therefore, when water was heated in it within the twenty-four hours, the water itself became like a neveila, and a new מעת לעת is counted from the hour the water was heated — for it is now the fresh issur. This is the chidush of the seif: the water does not merely absorb, it becomes a neveila.
A night that passes dissipates — ר״ת (Taz ס״ק י; Shach ס״ק י״ט): אבל אם עברה לילה מותר — but if a night has passed, it is permitted. The Taz explains that we rely here on the decisors who hold like רבנו תם, for whom standing overnight spoils the taste: so if the vessel stood a night before the water was heated in it, or if a night passed between the cooking of the meat and that of the milk, there is no בת יומה here any longer.
And the Shach makes the point precise: it is the night that dissipates the taste, not the mere passage of time.
The חנ״נ of meat and milk — is it peculiar to them? (Shach ס״ק י״ח):
The shitaDoes the water become a neveila?Source
The Taz (ס״ק י–י״א) In meat and milk, בכל האיסורים חתיכה נעשית נבילה (רמ״א יו״ד ק״ג:ז) — and the water is like a neveila; for other issurim it is a machloket at siman צ״ב Taz ס״ק י–י״א
The Shach (ס״ק י״ח) He does not concede a חנ״נ peculiar to meat and milk, and requires the מעת לעת from the heating of the water for all issurim Shach ס״ק י״ח
Nafka mina — other issurim, and the case of loss: the Rama rules, at the end of seif 7, that the same din holds for all issurim, by force of the rule "חתיכה נעשית נבילה" (siman צ״ב); and where there is loss, there is room to permit in such a case for other issurim, provided a מעת לעת has passed since the cooking of the issur.
The parenthesis cut from the source text gives there the provenance of the gloss — ב״י וסברת הרב. The Shach (ס״ק כ) specifies which loss is meant — a slight loss — since in a case of great loss it is permitted in any event, on the ground of those who do not say חנ״נ for a liquid absorbed in a liquid (siman צ״ב seif 4 in the gloss).
And in practice — ask your Rav.
The Pitchei Teshuva (ס״ק ב–ג) — the second dish: there is a dispute about the second dish cooked in the pot that has become forbidden: the כנסת יחזקאל forbids it, on the ground of חתיכה נעשית נבילה, while the גבעת שאול permits it — what is rendered forbidden being no more severe than what forbade it; and the Pitchei Teshuva himself concludes to permit.
And at ס״ק ג he brings the נודע ביהודה (חלק יורה דעה סימן ל״א), on wine cooked in a meat vessel בן יומו and then stirred with a dairy spoon בת יומה.

9. Chakira and practical nafka mina

↩ Detailed explanation (level 1)
The overall chakira of the siman: what is a "נותן טעם לפגם", and when does a spoiled taste not forbid?
Practical nafka mina (following the line of the Acharonim brought here):
  1. נותן טעם לפגם — permitted, even if it spoils only slightly; but a בריה or an important thing not spoiled in itself is not nullified (Rama seif 1).
  2. An issur that is the larger part and has substance — and likewise ציר — requires complete spoiling; for taste alone, slight spoiling suffices (Mehaber seif 2; Taz ס״ק ג).
  3. Improving and then spoiling, or spoiling and then improving — forbidden; and so too, for the חוכך, where one benefits from the added quantity.
  4. A pot that is not בת יומה — past the מעת לעת — does not forbid, provided it is rinsed and free of fat on its surface (Taz ס״ק ח).
  5. Sharpness, in the majority, turns the spoiled into an improvement and forbids; and for a pot of meat and milk in which water was heated, the מעת לעת is counted from the heating of the water, a night that passes dissipating the taste.
And in practice — ask your Rav.
