1. The axiom: a taste that spoils does not forbid — notein taam lifgam
The starting point:
Siman 103 states a great principle of issour ve-heter: any forbidden substance whose taste is spoiled (טעמו פגום) does not forbid its mixture. And even if the forbidden substance is not spoiled in itself — it is savory and excellent on its own — but it spoils the mixture into which it fell → it is permitted (seif 1). The source (Taz s.k. 1) is derived from the verse of the גר: "לֹא תֹאכְלוּ כָל נְבֵלָה לַגֵּר אֲשֶׁר בִּשְׁעָרֶיךָ תִּתְּנֶנָּה" — only a נבילה fit for the גר (edible) is called נבילה; a taste that spoils is like an inedible נבילה.

💡 The marker: this siman no longer speaks of "60 / nullification" as the previous simanim, but of the quality of the taste: שבח (improvement) → forbidden; פגם (spoilage) → permitted. The נטל״פ need not even spoil completely; spoiling a little (פוגם קצת) suffices (seif 2). But the davar hashouv (בריה and the like, Rama) that is not spoiled in itself is not nullified, even in a thousand.
2. The 3 reflex questions
■ DOES IT SPOIL? (פוגם / משביח) — does the forbidden substance impart to the mixture a spoiled taste (פגם → permitted) or an improved / neutral taste (שבח → forbidden)? Even spoiling a little suffices to permit (seif 1-2).
↓ we look at the nature of the prohibition
■ TASTE ALONE OR SUBSTANCE? (גוף האיסור) — is there only the taste of the prohibition (טעמו בלבד)? Then permitted if it spoils a little, even a majority prohibition. But if there is its substance (ממש) and it is the majority or מחצה → a complete פגם is required (seif 2). The ציר (brine) counts as the substance (Taz s.k. 3).
↓ we look at the duration of the פגם
■ START TO FINISH? (מתחילתו ועד סופו) — does it spoil without interruption? Yes → permitted. But if it improved then spoiled (השביח ולבסוף פוגם) or spoiled then improved (פוגם ולבסוף השביח) → forbidden (seif 2).
⚖ The pot / the spoon / the יורה (Rama seif 2)
Even if the prohibition is נ״ט לפגם and the food is permitted, the pot (קדירה) remains forbidden: if within 24h one cooks in it a 2nd food that the 1st prohibition improves, the 2nd food is forbidden for lack of 60 against the 1st prohibition. But if one stirred the 1st food with a spoon (כף) and then plunged the spoon into a 2nd food that it also spoils → the pot is not forbidden (this is נ״ט בר נ״ט דהיתרא, Taz s.k. 6). Likewise a thing with no taste at all, such as the יורה in which honey is melted, even though bees' legs (רגלי הדבורים) are found in it → the cauldron is not forbidden.

An absolute must to memorize. Basis: Mehaber seifim 1-2, read with the Rama, the Taz (s.k. 1-6) and the Shach (s.k. 1-3).

📌 Key reading: in נטל״פ, first ask does the prohibition spoil (a little suffices). Then distinguish taste alone (permitted even as a majority) from majority substance (a complete פגם is needed). And look at the duration: it must spoil start to finish, otherwise → forbidden.
4. The 5 golden rules
- נותן טעם לפגם מותר. A prohibition that imparts to the mixture only a spoiled taste does not forbid it (source: the נבילה fit for the גר, Taz s.k. 1) — seif 1.
- A little suffices, but not the majority with substance. פוגם קצת permits; but a majority prohibition (or מחצה) with substance requires a complete פגם; taste alone → permitted even as a majority (seif 2).
- מתחילתו ועד סופו. The פגם must last from start to finish; משביח ולבסוף פוגם (or the reverse) → forbidden (seif 2).
- בת יומה / אינה בת יומה (24h). A pot not used for 24h gives a spoiled taste and does not forbid — provided it is rinsed (no fat בעין on its surface); 60 against the stuck-on residue suffices (seif 5).
- דבר חריף משוי לשבח. A sharp body (peppers / spices) "improves" the spoiled taste → nullifies the נטל״פ and forbids (seif 6); and in bassar be-halav the water heated within 24h becomes נבילה (חנ״נ, seif 7).
5. Mnemonic — the "PAGUM" memory aid

- Amount of substance (ממשות): majority substance → complete פגם required; taste alone → permitted even as a majority.
- Goes start to finish: it must spoil מתחילתו ועד סופו, otherwise forbidden.
- Utensil not בת יומה: 24h → spoiled taste; rinsed + 60 against the stuck-on residue.
- Makes sharp (חריף): sharpness "improves" → forbidden (seif 6).

6. The 4 classic pitfalls
❌ Pitfall 1 — Thinking "a little suffices" always: פוגם קצת permits when a small amount of prohibition falls into abundant permitted food. But yesh mi she'omer: an abundant prohibition in a reduced permitted food, and even half-and-half (מחצה על מחצה), is not permitted by נטל״פ — a complete פגם (inedible) is required. Except if there is no substance, only the taste (טעמו בלבד) → there, permitted even as a majority (seif 2).
❌ Pitfall 2 — Forgetting "מתחילתו ועד סופו": it is not enough that the prohibition ends up spoiling. If it improved then spoiled (השביח ולבסוף פוגם) — or spoiled then improved (פוגם ולבסוף השביח) — it is forbidden (Taz s.k. 5 example: vinegar of yayin nesech in groats). The פגם is valid only if it is continuous. And the חוכך (Taz s.k. 4): if one benefits more from the quantity it added than what it spoils in taste → forbidden.
❌ Pitfall 3 — The pot, the spoon and the honey: even when the food is permitted (נטל״פ), the pot remains forbidden and a 2nd food improved within 24h is forbidden for lack of 60. But a spoon (כף) that passes from a spoiled food to another food that it also spoils is נ״ט בר נ״ט דהיתרא → permitted; and a thing with no taste at all, such as the honey יורה with bees' legs, is not forbidden. Do not confuse the pot (forbidden) with the spoon / יורה (not forbidden).
❌ Pitfall 4 — אינה בת יומה without rinsing, and the חריף: a pot אינה בת יומה (past 24h since the prohibition was cooked in it) "spoils" and does not forbid — provided it is rinsed (מודחת), with no fat בעין on its surface (the בעין never spoils, Taz s.k. 8). And beware of the דבר חריף: a sharp body (peppers) in a pot that is not בת יומה "improves" (לשבח) the spoiled taste → everything is forbidden (seif 6, ruled by the Beit Yossef).
