Translation. The כחל — that is, the udder of the animal — is forbidden by the words of the Soferim, since meat cooked in the milk of a slaughtered animal is not forbidden by the Torah.

Therefore, if he cut it open and squeezed out the milk in it, it is permitted to roast it and eat it; and if he cut it crosswise (warp and woof) and pressed it against the wall until no moisture of milk remained in it, it is permitted to cook it with meat.

A כחל that he did not cut open — whether of a young animal that never nursed or of a mature one — it is forbidden to cook it; and if he transgressed and cooked it by itself (and all the more so if he roasted it), it is permitted to eat it. And if he cooked it with other meat, one measures it in sixty, and the כחל is part of the count.

Gloss of the Rama: and there are those who say that if it first fell into a pot that does not contain sixty and the כחל thereby became forbidden, then if it afterwards falls into another pot the כחל no longer joins the sixty — and this is the main view.

1. Introducing the sugya — milk of a slaughtered animal is not forbidden by the Torah

↩ Detailed explanation (Level 1)

The basic source

Translation. The root of the siman is the sugya in Chullin (109b — 110a), and it is already in the Mechaber's opening words: the כחל is forbidden by the words of the Soferim, since meat cooked in the milk of a slaughtered animal is not forbidden by the Torah. That is: the milk contained in the udder is not full-fledged milk of the kind the Torah forbids, since it never left the animal in its lifetime; its entire prohibition is therefore rabbinic.
A foundational note. The Torah prohibition of meat and milk (siman פ״ז) is the meeting of the meat of a kosher animal with the milk of a kosher animal — and that milk is the milk of the animal in its lifetime. In the כחל, however, the milk within is the milk of a שחוטה — milk left in the udder after the animal was slaughtered. Since it never became "milk" in the full sense, there is no Torah prohibition here, but a rabbinic decree. As for the reason of the prohibition itself, the Shakh (ס״ק ה) brings two sides: lest one eat it before the cooking is finished, or else because of appearances.
The Taz (ס״ק א, on the words מותר לאוכלו) brings the reason of the gemara and Rashi: the milk is not gathered inside, it is absorbed in the flesh and never became milk — hence a purely rabbinic prohibition, though cutting is still required לכתחלה.

2. The chakira of the yesod — what is the reason for the prohibition of the כחל

↩ Detailed explanation (Level 1)
The chakira. What is the status of the milk contained in the כחל?
The yesod of the chakira.
The Shakh (ס״ק ה) decides that the prohibition of the כחל is not because it has more taste of milk than other meat, but because of the cavities in the כחל in which the milk is gathered — and that milk takes on the taste of the meat cooked with it.

From here: both reasons are true together. On the one hand there is no full-fledged milk (hence rabbinic); on the other there is a חלב שבגומות that must be driven out by cutting before cooking.
And the Shakh explains why it remains forbidden even though all the milk comes out by the end of the cooking: it is before the cooking is finished that the piece was rendered forbidden by the milk of the cavities, and once forbidden it does not become permitted again — either lest one eat it before the cooking is finished, or because of appearances. Two answers, in the Shakh, to the prohibition itself.

3. The parameters of preparing the כחל — cutting, pressing and squeezing out

↩ Detailed explanation (Level 1)

Three levels of preparation according to the Mechaber

The actThe preparation requiredSource
Roasting (and eating) Cutting and squeezing out the milk (crosswise cutting לכתחלה) Mechaber seif א', seif ב'
Cooking with meat Crosswise cutting and also pressing against the wall until no moisture remains Mechaber seif א'
Frying / pie (פשטיד״א) Crosswise cutting and pressing against the wall (as for cooking) Mechaber seif ב'
The Rama (seif ב') adds a chidush in the very definition of the preparation: the practice of cutting and recutting the piece several times crosswise over its whole surface is preferable, and works better, than pressing against the wall (Terumas HaDeshen, siman קפ״ב). In other words: multiplying the cuts outweighs the pressing.
The Shakh (ס״ק ט) brings, in the name of the Beis Yosef in the name of the Rashba, that placing it under the press is like pressing it against the wall. The press and the wall carry equal weight: both express the milk.
Kashya. Why, for roasting, does cutting alone suffice, while for cooking pressing is also required?
Teretz. In roasting, the fire draws the milk out and expels it; there is no concern that it will be reabsorbed. In cooking, by contrast, the milk that comes out is reabsorbed into the meat in the pot. One must therefore press all the milk out of the cavities beforehand by pressing against the wall. This is exactly the Shakh's yesod (ס״ק ה): what is feared is the חלב שבגומות.

4. Roasting, cooking and frying — three degrees of stringency

↩ Detailed explanation (Level 1)

The text of the Mechaber and the Rama (seif ב')

Translation. The practice has become not to cook it with meat at all; and to cook it without meat, in frying or in a pie, one requires crosswise cutting and pressing against the wall; for roasting — crosswise cutting. Gloss: and for a pot without meat the practice is to forbid it לכתחלה, and likewise for frying, even without meat; however, if it dried out — that is, after thirty days — and one transgressed and cooked it, even with meat, it is permitted בדיעבד.
Three degrees.
  1. Roasting — the lightest of all: וכ״ש אם צלאו (שו״ע יו״ד צ׳:א), since the fire expels the milk.
  2. Cooking or frying, alone — permitted בדיעבד by the letter of the din (seif א'), but the practice forbids it לכתחלה (a decree).
  3. Cooking with meat — the practice forbids it entirely, and בדיעבד it depends on the measure and on the loss.
The Shakh (ס״ק ו) opens the whole of seif ב' with a definition that governs how it is read: all of this is a matter of custom; as for the letter of the din בדיעבד, the Mechaber's view was set out in seif א', and the Rama's view in the gloss to this seif.
The Shakh (ס״ק י״ד) sets out the reach of the custom: the prohibition לכתחלה holds even after crosswise cutting and pressing against the wall — and he himself refers, for the reason, to his ס״ק כ״א, where he writes that the stringency of the pot is only a decree lest one come to cook it with meat.
Nafka mina — a dried-out כחל. The Rama rules that a dried-out כחל (after thirty days) is permitted בדיעבד even if it was cooked with meat. And the Shakh (ס״ק י״ז) specifies that the thirty days are only a presumption: if we plainly see that it is genuinely dry, it is permitted even before then. The thirty days are therefore not an absolute condition but a chazaka. In practice — ask your Rav.

5. Nullification in sixty, and the כחל as part of the count

↩ Detailed explanation (Level 1)

The text of the Shakh (ס״ק ד)

Translation. The Shakh (ס״ק ד), on the words "one measures it in sixty": it is stated in Shas, and agreed by all the poskim, that sixty are required against the whole כחל, and not against what came out of it, since we do not know how much came out. And he has already written the like at siman ס״ט, seif י״א, regarding meat cooked without having been salted: sixty are needed against that meat, and it does not suffice to have sixty against the blood within it.
The chakira — why is the כחל "part of the count"? Since the כחל is itself forbidden (it is a forbidden piece), how can it itself enter into the sixty that nullify the milk it contains?
The teretz of the Rishonim (brought by the Taz ס״ק ב in the name of the Rashba). The Rashba's reason: the כחל is itself meat, and it joins with the meat to nullify the milk within it. That is, the body of the כחל is permitted meat, and the prohibition is only the absorbed milk; the flesh of the כחל therefore joins the rest of the meat to nullify the small quantity of milk. And in the Taz's words: the flesh itself bears no name of prohibition, only a prohibition is attached to it — and once there is enough to nullify it, the attachment falls away.
Two reasons for the "כחל of the count".

6. חתיכה נעשית נבילה in the כחל — the machlokes of the Rambam and the Rashba

↩ Detailed explanation (Level 1)

This is the central lamdanic machlokes of the siman, and we open it with the text of the Taz.

The text of the Taz (ס״ק ד)

Translation. The Taz (ס״ק ד), on the words "and one measures it in sixty as at first": this implies that even if it first fell into less than sixty, it is as at the beginning — one joins the כחל as well; so wrote the Bedek HaBayis of the Ra'ah. Whereas the Rama's "there are those who say", which is the Rashba, holds that once it fell into less than sixty, the permitted part itself becomes a piece of neveila, since the Sages made it like meat-and-milk, and meat-and-milk, by all opinions, becomes neveila; one therefore needs sixty afterwards against the כחל, and the כחל does not join in.
The chakira, precisely. When the כחל fell into a pot that does not hold sixty and thereby became forbidden —
ShitaFell into less than sixty — does it join in the second pot?Source
Rambam, Ra'ah (Bedek HaBayis), Beis Yosef It joins — "so that its end should not be more stringent than its beginning"; there is no חנ״נ in rabbinic meat-and-milk Taz ס״ק ד; Beis Yosef
Rashba, Rama ("and this is the main view") It does not join — it became a piece of neveila, since meat-and-milk, by all opinions, becomes neveila Gloss to seif א'; Taz ס״ק ד; Toras HaBayis HaArokh
The Taz himself limits the reach of the divergence with an observation worth holding on to for section 8: the Ran's reasoning, he says, speaks only of the case where the כחל fell into sixty — for then the כחל is forbidden only because of appearances, and it does not forbid the second pot more than the first.
A great nafka mina (Taz ס״ק ד). The Taz writes that a new machlokes is born here between the Rambam and the Rashba, one the poskim had not mentioned: for the Rambam, we do not say "the piece itself becomes neveila" even in rabbinic meat-and-milk; and since the Rama ruled here like the Rashba, it turns out that for us we say, in all prohibitions, that the piece becomes neveila even for a rabbinic prohibition — and he refers to siman צ״ב, seif ד'. The Rama's decision on the כחל thus serves as a precedent for the whole field of חתיכה נעשית נבילה in rabbinic prohibitions. In practice — ask your Rav.

7. The dispute of the Mechaber, the Maharshal and the Bach — cooked with meat,

↩ Detailed explanation (Level 1)

The text of the Rama (seif ב')

Translation. Gloss of the Rama: and if he transgressed and cooked it — if he had cut it crosswise and pressed it against the wall, there is room to permit בדיעבד, in a case of substantial loss; but without that, there is no room to permit (Sefer HaTeruma, Mordechai, Hagahos Maimoniyos, the Tur).

The text of the Shakh (ס״ק ח)

Translation. The Shakh (ס״ק ח): "there is room to permit בדיעבד in a case of substantial loss" — even with meat, as is clearly proven from the Toras Chatas; but by itself it is permitted through crosswise cutting and pressing against the wall, even without substantial loss. And the view of the Maharshal, in his Issur veHetter and in his work (Yam shel Shlomo, chapter כ״ה, siman מ״ז), is to permit בדיעבד with meat, through crosswise cutting and pressing against the wall, even without substantial loss. And the Bach ruled that if it was cooked with other meat and there is no sixty against it, everything is forbidden even בדיעבד, even if he cut it crosswise and pressed it against the wall — and not like the gloss of the Shulchan Arukh which is lenient here in a case of substantial loss.
Three shitos.
The Shakh's decision against the Bach. The Shakh writes that he has not fathomed the Bach's reasoning: all the poskim — the Rif, the Rambam, Rabbenu Tam, the Tosafos, the Rosh, the Rashba, the Ran, the Semag, the Semak, the Mordechai, the Sha'arei Dura and the rest, the Mechaber among them — permit בדיעבד, and many of them permit even לכתחלה; only the Ravyah and the Or Zarua are stringent even בדיעבד. There is therefore certainly ground to rely, at the very least בדיעבד in a case of substantial loss, all the more so since this is a rabbinic prohibition and the plain sense of the sugya runs their way.

8. The sugya of the Rama's « וי״א » — once the כחל has been forbidden it no longer joins in

↩ Detailed explanation (Level 1)

The text of the Shakh (ס״ק ה)

Translation. The Shakh (ס״ק ה), on the words "and there are those who say that if it first fell into a pot, etc.": that is, into a pot of meat that does not hold sixty even counting the כחל — that is, that it fell into less than fifty-nine, so that the milk coming out of it was not nullified; the כחל therefore became forbidden by the letter of the din. But when it fell into sixty, so that the milk coming out of it was nullified and the כחל was forbidden only because of appearances — even in a second pot the כחל joins the sixty, since it is not diminished by having been forbidden: in the first pot too the כחל joined the sixty although it was itself forbidden.
The Shakh's precision. The Rama's "וי״א" speaks exclusively of the case where the כחל fell into less than sixty (less than fifty-nine) — for then it was forbidden by the letter of the din (the piece becomes neveila), and so it no longer joins in a second time. But if it fell into sixty, the כחל was forbidden only because of appearances, and it does indeed join, even in a second pot. And this accords with the words of the Taz cited above (section 6).
בריה — the rejection of the Bach. The Shakh, at the end of his ס״ק ה, rejects the Bach who had written that the כחל would be a בריה like the sciatic nerve. That, says the Shakh, is astonishing: it is established in Shas and among the poskim, at siman ק', that only what was forbidden from the very beginning of its formation is a בריה; and it is explained in the Rambam that the sciatic nerve is a בריה, whereas the כחל is not. Nafka mina: a בריה is not nullified even in a thousand, whereas the כחל, not being a בריה, is nullified in sixty.

9. The knife, the spit and soaking — seifim ג'—ד'

↩ Detailed explanation (Level 1)

The text of the Mechaber (seif ג')

Translation. It is permitted to cut a hot כחל with a knife that has cut meat (and all the more so a raw כחל, even though it is full of milk), and likewise it is permitted to cut meat with a knife that has cut a כחל. Gloss: and the same applies to roasting one on a spit on which the other was roasted, for once the כחל has been roasted its status is that of any other meat in every respect — and this on condition that it was roasted according to its rule.
The Shakh (ס״ק כ״א) explains why the knife is lighter than the pot: this rule applies even for us, provided it was cut crosswise and pressed against the wall, as the Rama wrote in his gloss; and one does not compare this to the pot, where the practice is not to cook it alone even after cutting and pressing — for the stringency of the pot is only a decree lest one come to cook it together with meat, which does not apply to a knife (Semak siman רי״ג, Hagahos Maimoniyos).

The sugya of כבוש כמבושל in the milk of a slaughtered animal (seif ג' / Taz ס״ק י״ב)

Translation. Text of the Mechaber (in the gloss to seif ג'): and likewise, if he left it whole before roasting it, with its milk, for a whole day — it is permitted, and we do not say "soaked is like cooked" in such a case (Issur veHetter). And the Taz (ס״ק י״ב) brings the reason in the name of the Issur veHetter: since the milk of a slaughtered animal is rabbinic, the Sages did not decree about it in cold conditions to say "soaked is like cooked", even though the milk is there, liquid and visible.
The Taz's kashya (ס״ק י״ב). The Issur veHetter himself wrote that if other meat soaks cold in the milk of a slaughtered animal, it is forbidden on account of soaking. And the Taz is astonished: the underlying prohibition is only a decree on account of meat-and-milk in general; yet regarding soaking, even in Torah-level meat-and-milk it is permitted — this would therefore be a decree upon a decree, and whence would we derive to decree here a decree upon a decree?
The Taz's conclusion and the Rama's view. The Taz concludes that there is no ground to forbid soaking in the milk of a slaughtered animal (it would be a decree upon a decree), and he adds that this appears to be the Rama's view here too, since he did not copy the prohibition concerning other meat soaked in the milk of a slaughtered animal. By contrast, the Pischei Teshuva (ס״ק ה) brings in the name of the Pri Megadim a stringent side: if the כחל remained with meat, over the fire, in an unperforated vessel, for the required time, and there is brine, it may be forbidden for us, since we would say "soaked" in the milk of a slaughtered animal — and not like the Taz. In practice — ask your Rav.

The text of the Mechaber and the Rama (seif ד')

Translation. To roast a כחל, or to salt it with meat, has the same status as roasting or salting a liver with meat. And there is one who permits salting a כחל above the meat. Gloss: and one should not salt it with meat, but בדיעבד it is permitted in every case. The skin of the maw, once its fat has been removed from within it and it has been rinsed, has the status of any other meat — and has no status of a כחל at all.
The Shakh (ס״ק כ״ו), on the words "and there is one who permits": even לכתחלה, to salt a כחל above meat, and even without having cut it at all; and one does not compare this to a liver, for the way of salt is to draw out only blood, and not the milk within it (the Tur in the name of the Rosh). The chidush: salt does not draw out milk the way it draws out blood, hence the greater leniency.
The Pischei Teshuva (ס״ק ה) limits this chidush in the name of the Pri Megadim: it is only regarding the milk of the כחל that the nature of salt is not to draw out milk; but if milk was absorbed into a piece of meat, that piece itself becomes forbidden and then forbids through salting.

10. Chakira and nafka mina in practice

The overall chakira. The prohibition of the כחל — is it a prohibition of the object (the milk absorbed in the cavities is itself the prohibition), or a mere decree (lest one come to cook meat in genuine milk)? And both sides are true: having fallen into less than sixty, there is substance of milk; having fallen into sixty, only appearances remain.
Nafka minos in practice.
  1. A dried-out כחל (after thirty days, or genuinely dry) — permitted בדיעבד even with meat (Rama seif ב'; Shakh ס״ק י״ז).
  2. A כחל pie — permitted outside a pan; in a pan — like cooking (Rama; Shakh ס״ק י״ט).
  3. Substantial loss — one permits בדיעבד with meat after cutting and pressing (Shakh ס״ק ח, against the Bach).
  4. Soaking in the milk of a slaughtered animal — for halakha we do not say "soaked is like cooked" (Taz), and according to the Pri Megadim there is room for concern (Pischei Teshuva
In all of these — and in practice — ask your Rav.
