The previous siman said who leads the blessing; this one opens the laws of blessings over food and asks the most everyday question of all: what do I say over what I am holding? A grape still green, an apricot kernel, a little olive oil, a caper, a spoonful of plum preserve, a glass of water in which raisins were steeped, a lump of sugar, a peppercorn: over each one the Choulhan Aroukh asks a single thing — is this the fruit of the tree? This whole siman is built on one sentence of the Mishnah — על פירות האילן הוא אומר בורא פרי העץ (ברכות ל״ה ע״א) — and on the difficulty hidden in it. For a tree does not produce fruit alone: it produces leaves, rinds, kernels, saps and spices; and the fruit itself passes through states in which it is not yet ripe, or already spoiled, or crushed, pressed, cooked, preserved. Each time the same question returns: is this still the fruit of the tree? Only three answers are possible — בורא פרי העץ, בורא פרי האדמה, שהכל — and a fourth, rarer one, which is to say nothing at all. We study here at the level of principle; for personal conduct, one refers to the ruling of the Rav.

A. על כל פירות האילן — the rule and its exception

פְּרִי הָעֵץ — the fruit of the tree. The previous siman asked who blesses; this one asks what is blessed, and with which formula. The whole matter turns on a distinction the Mishnah states in a single stroke — על פירות האילן הוא אומר בורא פרי העץ (ברכות ל״ה ע״א) — and which the eighteen seifim will test case by case: is everything that grows on a tree really the fruit of the tree? An unripe grape, a kernel, a caper rind, a drop of date honey, a pinch of dry pepper: each forces the word fruit to be defined again.

Seif 1 — על כל פירות האילן ... חוץ מהיין

על כל פירות האילן מברך בתחילה בורא פרי העץ חוץ מהיין שמברך עליו בפה״ג בין חי בין מבושל בין שהוא עשוי קונדיטון דהיינו שנותנין בו דבש ופלפלין: הגה ואם נתערב יין בשכר אזלינן אחר הרוב אם הרוב יין מברך בפה״ג ואם הרוב שכר מברך שהכל: (ב״י בשם התשב״ץ):
Seif 1: over every fruit of the tree one first recites בורא פרי העץ — except wine, over which one recites בורא פרי הגפן, whether it is raw, cooked, or made into קונדיטון, that is, that honey and pepper were put into it. Gloss: and if wine became mixed with beer, we follow the majority — if the majority is wine one recites בפה״ג, and if the majority is beer one recites שהכל (Beit Yossef in the name of the Tashbetz).
The general rule, and its single exception: על כל פירות האילן מברך בתחילה בורא פרי העץ (שו״ע או״ח ר״ב:א) — word for word the Mishnah: על פירות האילן הוא אומר בורא פרי העץ חוץ מן היין שעל היין הוא אומר בורא פרי הגפן (ברכות ל״ה ע״א). summary: the whole siman unfolds from that sentence — on one side what is truly a fruit of the tree, on the other what is only derived from it.
Why is wine the exception? Not because it improved: the Gemara rejects that reason — והרי שמן דאשתני לעלויא ולא אשתני לברכה (ברכות ל״ה ע״ב) — and gives the true one: אלא אמר מר זוטרא חמרא זיין משחא לא זיין (ברכות ל״ה ע״ב). summary: wine sustains, oil does not; because it stands in the place of food and not of a mere drink, it received a blessing of its own.
And that blessing never leaves it: בין חי בין מבושל בין שהוא עשוי קונדיטון (שו״ע או״ח ר״ב:א). The gloss adds the case of a mixture: ואם נתערב יין בשכר אזלינן אחר הרוב (רמ״א או״ח ר״ב:א). summary: cooked or spiced, wine remains wine; but sunk in a majority of beer it is no longer what one is drinking — and the blessing follows what is actually drunk.

B. מאימתי נעשה הפרי פרי — the threshold of ripeness

בּוֹסֶר — the unripe grape. One question, and it decides much: from what moment does what hangs on the branch earn the name of fruit? The siman's answer is measured by size for the vine, by a visible sign for the carob and the olive, and by edibility for every other tree.

Seif 2 — הבוסר, and from when a fruit becomes a fruit

הבוסר כל זמן שלא הגיע לכפול הלבן מברך עליו בפה״א ומשהוא כפול הלבן ואילך מברך עליו בורא פרי העץ ומתוך שלא נודע לנו שיעור פול הלבן לעולם מברך בפה״א עד שיהיה גדול ביותר ושאר כל האילן משיוציא פרי מברכין עליו בורא פרי העץ ובלבד שלא יהא מר או עפיץ ביותר עד שאינו ראוי לאכילה אפי׳ ע״י הדחק דאז אין מברכין עליו כלל: הגה וי״א דעל חרובין אינו מברך בורא פרי העץ עד שיראה בהם כמין שרשראות של חרובין וכן בזיתים עד שיגדל הנץ סביביו וקודם לכן מברך בפה״א וכן עיקר: (טור)
Seif 2: the unripe grape (בוסר), so long as it has not reached the size of a white bean, one recites over it בורא פרי האדמה; and from the size of a white bean onwards one recites over it בורא פרי העץ. And since the measure of the white bean is no longer known to us, one always recites בפה״א until it is quite large. And as for every other tree, from when it puts forth fruit one recites over it בורא פרי העץ — provided it is not bitter or astringent to the point of being unfit to eat even at a pinch, for then one recites no blessing over it at all. Gloss: and some say that over carobs one does not recite בורא פרי העץ until there appear in them something like chains of carobs, and likewise for olives until the blossom grows around them; before that one recites בפה״א — and so is the main view (Tur).
A fruit is not a fruit from its first day: הבוסר כל זמן שלא הגיע לכפול הלבן מברך עליו בפה״א (שו״ע או״ח ר״ב:ב). The measure comes from the Gemara: ואמר רב אסי הוא בוסר הוא גרוע הוא פול הלבן (ברכות ל״ו ע״ב), immediately emended to אלא אימא שיעורו כפול הלבן (ברכות ל״ו ע״ב). summary: before that threshold the grape grows on the tree without yet being the tree's fruit — it is only a product of the ground.
A lost measure shifts the practice: ומתוך שלא נודע לנו שיעור פול הלבן לעולם מברך בפה״א עד שיהיה גדול ביותר (שו״ע או״ח ר״ב:ב). summary: doubt does not suspend the blessing, it tilts it toward the one that works either way — for one who recites בפה״א over a tree fruit has fulfilled his duty, and not the reverse.
And what cannot be eaten falls outside blessing altogether: ובלבד שלא יהא מר או עפיץ ביותר עד שאינו ראוי לאכילה אפי׳ ע״י הדחק דאז אין מברכין עליו כלל (שו״ע או״ח ר״ב:ב). summary: a blessing is the price of an enjoyment; where no enjoyment is possible there is nothing to pay. This principle returns in seifim 3, 4, 5 and 16.
The gloss supplies two visible thresholds: וי״א דעל חרובין אינו מברך בורא פרי העץ עד שיראה בהם כמין שרשראות של חרובין (רמ״א או״ח ר״ב:ב), and likewise for olives. The marker comes from the Mishnah cited in the Gemara: החרובין משישרשרו והגפנים משיגרעו והזיתים משיניצו ושאר כל האילנות משיוציאו (ברכות ל״ו ע״ב). summary: each species has its own outward sign of ripeness; what can no longer be measured is instead looked at.

C. עיקר הפרי — what, in the tree, is truly the fruit

עִקַּר הַפְּרִי — the essence of the fruit. Four seifim, four very different objects — a kernel, an oil, an almond, a caper bush — and a single question running through them: is what is in my mouth the fruit, or only something that comes from the fruit? To it a second question attaches, which often decides: is it edible?

Seif 3 — גרעיני הפירות: the kernels of fruit

גרעיני הפירות אם הם מתוקים מברך עליהם בורא פרי העץ ואם הם מרים אינו מברך עליהם כלל ואם מתקן על ידי האור מברך עליהם שהכל:
Seif 3: the kernels of fruit — if they are sweet, one recites over them בורא פרי העץ; if they are bitter, one recites no blessing over them at all; and if one made them palatable by fire, one recites over them שהכל.
A sweet kernel is treated as the fruit: גרעיני הפירות אם הם מתוקים מברך עליהם בורא פרי העץ (שו״ע או״ח ר״ב:ג). The Tur records the root of the discussion: ועל גרעיני הפרי כתב ר״י שמברכין עליהן בורא פה״ע דלענין ערלה חשיבי כפרי (טור אורח חיים סימן ר״ב). summary: what counts as fruit for orlah counts as fruit for the blessing.
But fire does not restore a lost rank: ואם מתקן על ידי האור מברך עליהם שהכל (שו״ע או״ח ר״ב:ג). summary: note the ending — not «nothing», and not בפה״ע, but שהכל. Fire made the kernel edible; it did not make it a fruit again, so one blesses only what remains true: that all came to be by His word.

Seif 4 — שמן זית: olive oil and anigron

שמן זית אם שתאו כמות שהוא אינו מברך עליו כלל משום דאזוקי מזיק ליה ואם אכלו עם פת אינו מברך עליו דפת עיקר ומברך על העיקר ופוטר את הטפילה ואם שתאו מעורב עם מי סלקיא (הנקרא אניגרון) שאז אינו מזיק אדרבא הוא מועיל לגרון אם הוא חושש בגרונו הוה ליה שמן עיקר ומברך עליו בפה״ע ואם אינו מתכוין לרפואה אלא לאכילה הוה ליה אניגרון עיקר ואינו מברך אלא על האניגרון (שהכל):
Seif 4: olive oil — if he drank it as it is, he recites no blessing over it at all, because it harms him. And if he ate it with bread, he recites no blessing over it, for the bread is the principal: one blesses the principal and thereby exempts the subordinate. And if he drank it mixed with beet-water (called אניגרון) — in which case it does no harm but on the contrary helps the throat — if he suffers in his throat, the oil is the principal and he recites over it בורא פרי העץ; and if he does not intend a remedy but food, the anigron is the principal and he blesses only over the anigron (שהכל).
Three ways of drinking the same oil, three different outcomes. Alone: nothing — אינו מברך עליו כלל משום דאזוקי מזיק ליה (שו״ע או״ח ר״ב:ד), already in the Gemara: אילימא דקא שתי ליה משתא אוזוקי מזיק ליה (ברכות ל״ה ע״ב). With bread: again nothing, but for an entirely different reason — זה הכלל כל שהוא עיקר ועמו טפלה מברך על העיקר ופוטר את הטפלה (ברכות ל״ו ע״א).
And in the anigron it is intention that decides which is principal: if his throat pains him, הוה ליה שמן עיקר ומברך עליו בפה״ע (שו״ע או״ח ר״ב:ד); if not, הוה ליה אניגרון עיקר ואינו מברך אלא על האניגרון (שו״ע או״ח ר״ב:ד). The Rambam rules otherwise in the first case: אבל אם שתה השמן לבדו או שלא היה חושש בגרונו מברך עליו שהכל שהרי לא נהנה בטעם השמן (רמב״ם הלכות ברכות פרק ח׳ הלכה ב׳). summary: here it is not the substance that fixes the blessing but the role its drinker gives it.

Seif 5 — שקדים המרים: bitter almonds

שקדים המרים כשהם קטנים מברך בפה״ע גדולים ולא כלום דאזוקי מזקי וטעמא דמלתא דכשהם קטנים עיקר אכילתם היא הקליפה ואינה מרה וכשהם גדולים עיקר אכילתם מה שבפנים והוא מר ואם מתקן ע״י האור או דבר אחר מברך בפה״ע:
Seif 5: bitter almonds — when they are small one recites בורא פרי העץ; when large, nothing at all, for they do harm. And the reason of the matter: when small, the main part eaten is the husk, and it is not bitter; when large, the main part eaten is what is inside, and that is bitter. And if one made them palatable by fire or by something else, one recites בורא פרי העץ.
The same fruit changes its blessing as it grows — and in the opposite direction to what one expects: שקדים המרים כשהם קטנים מברך בפה״ע גדולים ולא כלום דאזוקי מזקי (שו״ע או״ח ר״ב:ה). summary: the Choulhan Aroukh gives the reason itself — the part of the almond that is eaten is not the same at the two ages, and the blessing follows what is actually eaten.
Compare with seif 3 and a difference appears: there, a kernel made palatable by fire receives only שהכל (שו״ע או״ח ר״ב:ג); here, an almond made palatable receives בפה״ע (שו״ע או״ח ר״ב:ה). summary: the almond is its tree's fruit, and only its bitterness excluded it; remove the bitterness and the fruit returns. The kernel was never the fruit — fire makes it edible, not a fruit.

Seif 6 — צלף: the caper bush and its four parts

צלף (פי׳ צלף מין אילן שעלין שלו ראוין לאכילה ויש בעליו כמין תמרים. אביונות הוא הפרי מהצלף. וקפריסין הן קליפה שסביב הפרי כקליפות האגוזים על העלין ועל התמרות ועל הקפריסין בפה״א ועל האביונות שהם עיקר הפרי בפה״ע:
Seif 6: the caper bush (explanation: the צלף is a kind of tree whose leaves are fit to eat, and among its leaves there are things like dates; the אביונות are the fruit of the caper; and the קפריסין are the rind surrounding the fruit, like the shells of nuts) — over the leaves, over the תמרות and over the קפריסין one recites בורא פרי האדמה; and over the אביונות, which are the essential fruit, בורא פרי העץ.
One bush, four parts, two blessings: על העלין ועל התמרות ועל הקפריסין בפה״א ועל האביונות שהם עיקר הפרי בפה״ע (שו״ע או״ח ר״ב:ו). summary: the phrase עיקר הפרי is the key to the whole siman — it is not «what grows on the tree» that receives בפה״ע, but what is the fruit.
Note that the Choulhan Aroukh does not follow the plain Mishnah here. The Mishnah taught: על מיני נצפה על העלין ועל התמרות אומר בורא פרי האדמה ועל האביונות ועל הקפריסין אומר בורא פרי העץ (ברכות ל״ו ע״א) — the קפריסין together with the אביונות. But the Gemara concludes: לגבי ברכות נמי לאו פירא נינהו ולא מברכינן עליה בורא פרי העץ אלא בורא פרי האדמה (ברכות ל״ו ע״ב), and the Rambam writes likewise: קפרס של צלף מברך עליו בורא פרי האדמה מפני שאינו פרי (רמב״ם הלכות ברכות פרק ח׳ הלכה ו׳).

D. פרי שנשתנה — the fruit crushed, pressed, soaked

מַשְׁקִין הַיּוֹצְאִים — the liquids that come out of the fruit. Here the siman draws its sharpest line: crushing a fruit does not change it, pressing it does. A mashed date stays בפה״ע; the honey that runs from it falls to שהכל. And from that follows everything after — juices, cooking water, soaking water — up to the limiting case where raisin water becomes wine again.

Seif 7 — תמרים שמעכן ביד: date paste

תמרים שמעכן ביד ועשה מהם עיסה והוציא מהם גרעיניהם אפ״ה לא נשתנית ברכתן ומברך עליהם בפה״ע ולסוף ברכה אחת מעין שלש: הגה ולפי זה ה״ה בלטוערין הנקרא פווידל״א מברכין עליהם בורא פרי העץ וי״א לברך עליהם שהכל (ת״ה סי׳ פ״ט וב״י בשם הטור) טוב לחוש לכתחלה לברך שהכל אבל אם בירך בפה״ע יצא כי כן נראה עיקר:
Seif 7: dates that he crushed by hand and made into a paste, having removed their pits — even so their blessing has not changed: he recites over them בורא פרי העץ, and afterwards the single blessing «of the character of three». Gloss: and accordingly the same holds for the לטוערין called פווידל״א, over which one recites בורא פרי העץ; and some say to recite שהכל over them (Terumat haDeshen §89, and the Beit Yossef in the name of the Tur). It is good to be cautious a priori and recite שהכל; but if he recited בפה״ע he has fulfilled his duty, for so the main view appears.
Crushing is not transforming: אפ״ה לא נשתנית ברכתן ומברך עליהם בפה״ע (שו״ע או״ח ר״ב:ז). The Gemara says it outright: והלכתא תמרי ועבדינהו טרימא מברכין עלוייהו בורא פרי העץ (ברכות ל״ח ע״א), and gives the reason — מאי טעמא במלתייהו קיימי כדמעיקרא (ברכות ל״ח ע״א). summary: a crushed date is still a date; shape does not make the fruit.
The Rambam is the seif's direct source: אבל תמרים שמעכן ביד והוציא גרעינין שלהן ועשאן כמו עסה מברך עליהן תחלה בורא פרי העץ ולבסוף ברכה אחת מעין שלש (רמב״ם הלכות ברכות פרק ח׳ הלכה ד׳). And the gloss applies the rule to the fruit preserves of its own country, with a two-step conduct: טוב לחוש לכתחלה לברך שהכל אבל אם בירך בפה״ע יצא כי כן נראה עיקר (רמ״א או״ח ר״ב:ז).

Seif 8 — דבש הזב מהתמרים: the juices of fruit

דבש הזב מהתמרים מברך עליו שהכל וכן על משקין היוצאים מכל מיני פירות חוץ מזתים וענבים מברך שהכל:
Seif 8: the honey that flows from dates — one recites over it שהכל; and likewise over the liquids that come out of all kinds of fruit, apart from olives and grapes, one recites שהכל.
The juice is not the fruit: וכן על משקין היוצאים מכל מיני פירות חוץ מזתים וענבים מברך שהכל (שו״ע או״ח ר״ב:ח). The Gemara supplies the reason: האי דובשא דתמרי מברכין עלויה שהכל נהיה בדברו (ברכות ל״ח ע״א), since מאי טעמא זיעה בעלמא הוא (ברכות ל״ח ע״א). summary: the fruit's sweat is not the fruit — except for the two species to which the Torah itself grants a liquid of their own, wine and oil.
The Rambam frames the same law as a general rule: הסוחט פרות והוציא מהן משקין מברך עליהן בתחלה שהכל ולבסוף בורא נפשות. חוץ מן הענבים והזיתים (רמב״ם הלכות ברכות פרק ח׳ הלכה ב׳). summary: this is the key to all the seifim that follow — once the fruit leaves its form and becomes a drink, it loses its rank.

Seif 9 — סופי ענבים ונובלות: what never ripened

סופי ענבים שאין מתבשלין לעולם וכן על הנובלות שהם תמרים שבישלם ושרפם החום ויבשו מברך שהכל:
Seif 9: the late grapes that never ripen, and likewise the נובלות — that is, dates that the heat «cooked» and scorched so that they dried out — one recites over them שהכל.
A spoiled fruit drops to the lowest rank but does not leave blessing altogether: סופי ענבים שאין מתבשלין לעולם ... מברך שהכל (שו״ע או״ח ר״ב:ט). The Mishnah lists it among the lesser foods: על החומץ ועל הנובלות ועל הגובאי אומר שהכל נהיה בדברו (ברכות מ׳ ע״ב). summary: it is still edible — hence there is a blessing; it is no longer the fruit the tree intended — hence not בפה״ע.
What is a נובלת? The Gemara hesitates between two definitions: חד אמר בושלי כמרא וחד אמר תמרי דזיקא (ברכות מ׳ ע״ב) — dates dried out by heat, or dates blown down by the wind. The Choulhan Aroukh took the first, as does the Rambam: הפת שעפשה והיין שהקרים ותבשיל שעברה צורתו והנובלות שהן פגין (רמב״ם הלכות ברכות פרק ח׳ הלכה ח׳).

Seif 10 — פירות ששראן או בשלן במים: the water they soaked in

פירות ששראן או בשלן במים אע״פ שנכנס טעם הפרי במים אינו מברך על אותם המים אלא שהכל והרא״ש כתב דאפשר שאם נכנס טעם הפרי במים מברך בפה״ע:
Seif 10: fruit that one soaked or cooked in water — even though the taste of the fruit entered the water, one recites over that water nothing but שהכל. And the Rosh wrote that it is possible that if the taste of the fruit entered the water, one recites בורא פרי העץ.
Taste passes over; rank does not: אע״פ שנכנס טעם הפרי במים אינו מברך על אותם המים אלא שהכל (שו״ע או״ח ר״ב:י). summary: this is the direct continuation of seif 8 — water that took on the fruit's taste is even further from being «the fruit» than the juice pressed from the fruit itself.
And the Mechaber lets the Rosh's opinion stand beside his own: והרא״ש כתב דאפשר שאם נכנס טעם הפרי במים מברך בפה״ע (שו״ע או״ח ר״ב:י). summary: this is rare, and it is not idle — the next seif will draw from it a very concrete practical conduct for the God-fearing.

Seif 11 — מי שריית צמוקים: raisin water, and the wine it becomes

מי שריית צמוקים ותאנים או מי בישולם מברך עליהם שהכל ויוצא גם להרא״ש אבל בברכה של אחריהם יש להסתפק אם מברך בורא נפשות או אם מברך ברכה אחת מעין שלש כהרא״ש. ולכן ירא שמים לא ישתה אלא בתוך הסעודה או יאכל פרי מז׳ מינים וגם ישתה מים כדי שיצטרך לברך ברכה אחת מעין שלש ובורא נפשות ואם משך המים והבדילם מהצמוקים הוה ליה יין ומברך עליו בפה״ג וברכה אחת מעין שלש והוא שיהיו צמוקים שיהיה בהם לחלוחית שאם ידרוך אותם יצא מהם דבשן אבל אם כשיעצרו אותם לא יצא מהם שום לחלוחית דבש לא:
Seif 11: the water in which raisins and figs were soaked, or the water they were cooked in — one recites over it שהכל, and one thereby fulfils one's duty even according to the Rosh. But as to the blessing afterwards there is room for doubt: does one recite בורא נפשות, or the single blessing «of the character of three» as the Rosh holds? Therefore one who fears Heaven will drink it only in the course of a meal, or will eat a fruit of the seven species and also drink water, so as to be obliged to recite both the blessing «of the character of three» and בורא נפשות. And if he drew the water off and separated it from the raisins, it is wine: he recites over it בורא פרי הגפן and a blessing «of the character of three» — provided the raisins have moisture in them, such that if one trod on them their honey would come out; but if, when they are pressed, no honeyed moisture comes out of them, no.
A blessing before that works on every view, a blessing after that stays in doubt: מברך עליהם שהכל ויוצא גם להרא״ש (שו״ע או״ח ר״ב:י״א), yet אבל בברכה של אחריהם יש להסתפק (שו״ע או״ח ר״ב:י״א). summary: שהכל covers everything, whereas afterwards one must choose — and one cannot choose without deciding.
Hence a conduct of avoidance rather than decision: ולכן ירא שמים לא ישתה אלא בתוך הסעודה או יאכל פרי מז׳ מינים וגם ישתה מים (שו״ע או״ח ר״ב:י״א). summary: the doubt is not resolved; instead a situation is arranged in which both blessings will be owed anyway — one from the fruit of the seven species, the other from the water.
And the very same liquid, once separated from the raisins, becomes wine: ואם משך המים והבדילם מהצמוקים הוה ליה יין ומברך עליו בפה״ג (שו״ע או״ח ר״ב:י״א), on one precise physical condition: והוא שיהיו צמוקים שיהיה בהם לחלוחית שאם ידרוך אותם יצא מהם דבשן (שו״ע או״ח ר״ב:י״א). summary: a raisin that still holds moisture is still a vine; one that no longer does is merely a dried fruit in water.

E. חי ומבושל, מטוגן ומרוקח — cooking and the blessing

דֶּרֶךְ אֲכִילָתוֹ — the way it is eaten. Four seifim in which the fruit meets fire, honey and sugar. The rule that governs them is not chemical but human: one asks how people are accustomed to eat this food — and that custom fixes whether the fruit still stands in the first rank.

Seif 12 — פירות שטובים חיין ומבושלים: raw and cooked

כל הפירות שטובים חיין ומבושלים כגון תפוחים ואגסים בין חיים בין מבושלים מברך בפה״ע ואם אין דרך לאוכלם חיים אלא מבושלים אכלם כשהם חיים מברך שהכל כשהם מבושלים בפה״ע:
Seif 12: all fruits that are good both raw and cooked, such as apples and pears — whether raw or cooked one recites בורא פרי העץ. And if they are not customarily eaten raw but cooked: if he ate them raw he recites שהכל; cooked, בורא פרי העץ.
Cooking does not demote what is meant to be cooked: כל הפירות שטובים חיין ומבושלים כגון תפוחים ואגסים בין חיים בין מבושלים מברך בפה״ע (שו״ע או״ח ר״ב:י״ב). summary: the question is never «has the fruit changed?» but «is it still in its state as fruit?» — and human custom defines that state.
And the reverse as well: ואם אין דרך לאוכלם חיים אלא מבושלים אכלם כשהם חיים מברך שהכל (שו״ע או״ח ר״ב:י״ב). The Rambam states it as a two-sided principle: דברים שדרכן להאכל חיין ומבשלין אכלן בין חיין בין מבשלין מברך עליהן בתחלה ברכה הראויה להן (רמב״ם הלכות ברכות פרק ח׳ הלכה ג׳). summary: a fruit eaten otherwise than the way it is eaten does not stand at the level of its species.

Seif 13 — אגוז גמור המטוגן בדבש: the ripe nut in honey

אגוז גמור המטוגן בדבש ונקרא נואיגד״ו [ר״ל נויאיט] מברך עליו בורא פרי העץ:
Seif 13: a fully ripe nut fried in honey, called נואיגד״ו [that is, nougat] — one recites over it בורא פרי העץ.
The honey coats the nut; it does not replace it: אגוז גמור המטוגן בדבש ... מברך עליו בורא פרי העץ (שו״ע או״ח ר״ב:י״ג). The Tur expressly rejects the contrary view: וי״א כיון שאם בשלו בלא דבש משתני לגריעותא א״כ הוי דבש עיקר ומברך עליהם שהכל ולא נהירא (טור אורח חיים סימן ר״ב). summary: the nut remains the object of appetite, hence the principal — and the principal dictates the blessing.

Seif 14 — אגוז רך: the soft nut in honey

אגוז רך שמבשלים בדבש וקוראין לו נו״ס משקאד״ה מברך עליו שהכל: הגה וכן אותם אגוזים שמבשלים בדבש בעודם ירוקים מברכין שהכל [רבי ירוחם נתיב י״ז ח״ב וב״י]:
Seif 14: a soft nut cooked in honey, called נו״ס משקאד״ה — one recites over it שהכל. Gloss: and likewise those nuts that are cooked in honey while still green, one recites over them שהכל (Rabbi Yeruham, netiv 17, part 2, and the Beit Yossef).
Two neighbouring seifim, two opposite blessings — and the whole difference hangs on one word: אגוז גמור (שו״ע או״ח ר״ב:י״ג) against אגוז רך (שו״ע או״ח ר״ב:י״ד). summary: the ripe nut is already its tree's fruit and the honey merely accompanies it; the soft nut is not yet, and then it is the honey that carries the taste — and therefore the blessing.

Seif 15 — הסוקא״ר: sugar and the sweet cane

על הסוקא״ר מברך שהכל וכן המוצץ קנים מתוקות שהכל:
Seif 15: over sugar one recites שהכל; and likewise one who sucks sweet canes, שהכל.
The Choulhan Aroukh follows the Rambam here against the Geonim. The Rambam records their view and then writes: ואני אומר שאין זה פרי ואין מברכין עליו אלא שהכל (רמב״ם הלכות ברכות פרק ח׳ הלכה ה׳). summary: the cane is not planted to be eaten as a fruit, and the sugar drawn from it is a product of fire — two reasons that remove it from the rank of «fruit».

F. תבלין וכלל הספק — spices, and the rule of doubt

סָפֵק — doubt. The siman closes with three seifim on spices, and then with a gloss that applies to everything before it: what to do when one does not know? The answer comes in three degrees — I know, I doubt, I am ignorant — each stepping down one rung toward a broader blessing.

Seif 16 — פלפל וזנגביל יבשים: dry spices

על פלפל וזנגביל יבשים ועל הקלאו של גירופלו (ר״ל נעגליך) וכל כיוצא [בזה] שאין דרך לאוכלם אלא על ידי תערובות אין מברך עליהם כלום:
Seif 16: over dry pepper and ginger, over the heads of clove [that is, cloves], and over everything of that kind — which are not customarily eaten except within a mixture — one recites no blessing at all.
What is never swallowed on its own is not a food: שאין דרך לאוכלם אלא על ידי תערובות אין מברך עליהם כלום (שו״ע או״ח ר״ב:ט״ז). This is Rava's position against Rav Sheshet's: פלפלי רב ששת אמר שהכל רבא אמר לא כלום (ברכות ל״ו ע״ב), and Rava is consistent with himself: כס פלפלי ביומא דכפורי פטור כס זנגבילא ביומא דכפורי פטור (ברכות ל״ו ע״ב).
The Rambam gives the reason in a word: אבל יבשין אין טעונין ברכה לא לפניהם ולא לאחריהם מפני שהן תבלין ואינו אכל (רמב״ם הלכות ברכות פרק ח׳ הלכה ז׳). summary: a spice is not a dish but the taste of a dish; its blessing has already been said over the dish it seasons.

Seif 17 — אגוז מושקא״ט and קניל״ה: nutmeg and cinnamon

על אגוז מושקא״ט בפה״ע ועל קניל״ה [ר״ל צימרינד] בורא פרי האדמה:
Seif 17: over nutmeg, בורא פרי העץ; and over cinnamon [that is, cinnamon bark], בורא פרי האדמה.
Two spices, two blessings — because one is a fruit and the other a bark: על אגוז מושקא״ט בפה״ע ועל קניל״ה ... בורא פרי האדמה (שו״ע או״ח ר״ב:י״ז). summary: this is exactly the division of the caper bush in seif 6 — the fruit takes בפה״ע, what grows on the tree without being the fruit takes בפה״א.
And why are these spices blessed when the previous seif exempted spices? Because the question is not «is it a spice?» but «is it eaten?». The Tur says so explicitly of fresh ginger: וזנגבילא רטיבתא בפה״א שהיא ראויה לאכילה (טור אורח חיים סימן ר״ב).

Seif 18 — פלפל וזנגביל רטובים, and the rule of doubt

על פלפל וזנגביל כשהם רטובים בורא פרי האדמה: הגה כל הפירות שיודע בהם שהם עיקר הפרי מברך עליהם בורא פרי העץ ושאינן עיקר הפרי בפה״א ואם הוא מסופק אם הוא עיקר הפרי או לא בפה״א ואם אינו יודע מה הוא מברך שהכל [טור]:
Seif 18: over pepper and ginger when they are fresh, בורא פרי האדמה. Gloss: all fruits that one knows to be the essential fruit, one recites over them בורא פרי העץ; and those that are not the essential fruit, בפה״א. And if he is in doubt whether it is the essential fruit or not — בפה״א. And if he does not know what it is, he recites שהכל (Tur).
Fresh, the very same spice becomes food again: על פלפל וזנגביל כשהם רטובים בורא פרי האדמה (שו״ע או״ח ר״ב:י״ח). This is how the Gemara resolves its own contradiction: הא ברטיבתא הא ביבשתא (ברכות ל״ו ע״ב), and concerning the preserved ginger from India: האי המלתא דאתיא מבי הנדואי שריא ומברכינן עלה בורא פרי האדמה (ברכות ל״ו ע״ב). The Rambam: הפלפלין והזנגביל בזמן שהן רטבין מברך עליהן בורא פרי האדמה (רמב״ם הלכות ברכות פרק ח׳ הלכה ז׳).
And the gloss closes the siman with the rule that orders the whole of it: כל הפירות שיודע בהם שהם עיקר הפרי מברך עליהם בורא פרי העץ ושאינן עיקר הפרי בפה״א ואם הוא מסופק אם הוא עיקר הפרי או לא בפה״א ואם אינו יודע מה הוא מברך שהכל (רמ״א או״ח ר״ב:י״ח). summary: three degrees of knowledge, three blessings — I know it is the fruit; I am in doubt; I know nothing. Each degree steps down one rung toward the more general blessing.
Why does doubt step down to בפה״א and not to שהכל? Because the Rambam fixed the hierarchy: ברך על פרות האילן בורא פרי האדמה יצא ועל פרות האדמה בורא פרי העץ לא יצא (רמב״ם הלכות ברכות פרק ח׳ הלכה י׳). summary: בפה״א covers the tree, the reverse is not true; it is therefore the blessing of doubt — while שהכל, which covers everything, is the blessing of complete ignorance.
The siman in one sentence: one recites בורא פרי העץ over what is עיקר הפרי and over nothing else — not over what is not yet ripe (בוסר), not over what merely adheres to the fruit (קפריסין, קניל״ה), not over what has come out of the fruit (משקין היוצאין), not over what has spoiled (נובלות), and nothing at all over what is not eaten (פלפל יבש, large bitter almonds); whereas the crushed date, the cooked apple and the ripe nut in honey remain the fruit. And when one cannot decide: בפה״א for doubt, שהכל for ignorance.

Practical cases

Case 1 — A glass of orange juice in the morning

Situation: I have squeezed oranges. The orange is a tree fruit — should I recite בורא פרי העץ over its juice?
Conduct: no. Seif 8 is explicit: וכן על משקין היוצאים מכל מיני פירות חוץ מזתים וענבים מברך שהכל (שו״ע או״ח ר״ב:ח), and the Gemara gives the reason — מאי טעמא זיעה בעלמא הוא (ברכות ל״ח ע״א). Only wine and oil escape this rule. If, however, I eat the orange itself, even hand-crushed, seif 7 applies: אפ״ה לא נשתנית ברכתן ומברך עליהם בפה״ע (שו״ע או״ח ר״ב:ז). In practice one follows one's Rav.

Case 2 — Stewed apples

Situation: the apples are cooked and no longer look like apples. Has the blessing changed?
Conduct: no — precisely because the apple is among those eaten both ways: כל הפירות שטובים חיין ומבושלים כגון תפוחים ואגסים בין חיים בין מבושלים מברך בפה״ע (שו״ע או״ח ר״ב:י״ב). It is not cooking that demotes, but custom: a fruit never eaten raw, if eaten raw, falls to שהכל (שו״ע או״ח ר״ב:י״ב). In practice one follows one's Rav.

Case 3 — I do not know what it is

Situation: I am given a food I do not recognise, or I do not know whether it grows on a tree or in the ground. What should I say?
Conduct: the closing gloss of the siman answers exactly this, in three degrees: כל הפירות שיודע בהם שהם עיקר הפרי מברך עליהם בורא פרי העץ ושאינן עיקר הפרי בפה״א ואם הוא מסופק אם הוא עיקר הפרי או לא בפה״א ואם אינו יודע מה הוא מברך שהכל (רמ״א או״ח ר״ב:י״ח). The Tur had already framed a conduct of doubt: וכיון דאיכא פלוגתא דרבוותא טוב לברך עליהן בפה״א לצאת ידי ספק (טור אורח חיים סימן ר״ב). In practice one follows one's Rav.
