1. The Central Axiom

Siman רצ״ט in one sentence.
Motzei Shabbos is an "in-between": before Havdala, it is forbidden to eat, drink (except water) and do melakhah. If one said Atah Chonantanu in the tefilla, melakhah becomes permitted. 5. Releasing Melakhah Without Closing Shabbos

The heart of the siman is a distinction often confused: "being able to do melakhah" and "having said Havdala" are two separate things. After tzeis ha-kokhavim, three prohibitions apply — eating, drinking (except water), doing melakhah. But melakhah is released independently of Havdala on the kos, by a simple utterance.

Path 1 — Atah Chonantanu. Having inserted the Havdala formula into the 4th berakha of the Maariv Amidah suffices: melakhah becomes permitted even before Havdala on the kos, even without a kos.
Path 2 — Ha-Mavdil bein ha-kodesh le-chol. One who has not davened, or has an urgent need, says this abbreviated formula — without a berakha — and melakhah is then permitted. This is the path of the woman who needs to cook or light.
The fine point — eating is not released like melakhah. Atah Chonantanu and Ha-Mavdil open up melakhah, but not drinking and eating. So long as Havdala on the kos has not been made, eating remains forbidden. Why this asymmetry? Because the prohibition of melakhah hinges on the kedushah of the time that is ending — a verbal declaration of separation suffices to lift it; whereas the prohibition of eating is a closing kavod of Shabbos, which requires the concrete act of Havdala on the kos.

From this flows the last nuance of the siman: the windows for tashlumin are not the same. Havdala on wine (with "Ha-Mavdil") can be made up until Tuesday night — the end of the 3rd day, still attached to the departing Shabbos. But the berakhos of the ner and besamim are said only on motzei Shabbos itself: past that evening, they are lost. The siman thus teaches that closing Shabbos is not a single instant but a process at several levels.

7. Pitfalls to Avoid

Pitfall 1 — Drinking coffee/tea before Havdala: forbidden. Only water is permitted.
Pitfall 2 — Doing melakhah without saying anything: if Atah Chonantanu was not said, at least say "Ha-Mavdil bein ha-kodesh le-chol" first.
Pitfall 3 — Women who light without saying "Ha-Mavdil...": they must say the abbreviated formula first.
Pitfall 4 — Waiting past Tuesday for wine + Havdala: too late, the window is closed.
Pitfall 5 — Trying to say the berakhos of ner / besamim later: only motzei Shabbos. Otherwise lost.
