After teaching how to break the bread and recite the המוציא (siman 167), the Choulhan Aroukh now asks on which bread one blesses when several are before you, then which foods count as "bread." Two threads run through the siman: first an order of precedence (סדר קדימה) — the whole loaf, the noble species, the fine one ; then the great line between real bread (המוציא) and the cake-bread (פת הבאה בכיסנין) and cooked or fried doughs, judged by the קביעות סעודה, the כזית and the תואר לחם. We study here at the level of principle; for personal conduct, one refers to the ruling of the Rav.

A. פת שלם וחתיכות — the whole loaf takes precedence
פַּת שָׁלֵם — a whole loaf, not cut into. חֲתִיכוֹת / פְּרוּסוֹת — pieces or slices already detached. The basic rule of the siman: at comparable quality, one recites the המוציא on the whole loaf, for the whole one is more fitting for the blessing (חשיבות השלם). פַּת קִיבָּר denotes coarse, non-white bread ; פַּת נְקִיָּה a fine, white bread.
Séif 1 — חתיכות ופת שלם: the whole loaf before the pieces

Séif 1: if he had before him pieces of bread and a whole loaf, all of one kind — he blesses on the whole one, even if it is coarse bread (פת קיבר, i.e. bread that is not fine) and small, and the pieces are fine bread and large. But if the whole one is barley and the pieces wheat, even if it is small, he places the slice under the whole one and breaks both together. Gloss of the Rama: all this is when he wishes to eat from both; but if he wishes to eat only from one, he breaks on it and need not be concerned about the second, even if it is more important or more beloved to him.
The whole one prevails. At equal species, one recites on the whole loaf — even coarse and small — because of the loaf's dignity (חשיבות). But if the piece is of a nobler species (wheat vs barley), one gives up neither: one places the slice under the whole loaf and breaks both, honoring both the whole one and the species. The Rama adds: all this is when one wishes to eat from both; otherwise one blesses on what one eats.
Séif 2 — שתי שלמות וחצאי לחם: two loaves, two halves
אם ב׳ שלמות ממין אחד אחת גדולה ואחת קטנה מברך על הגדולה אם יש לאדם שני חצאי לחם ואין לו לחם שלם יחברם יחד בעץ או בשום דבר שלא יהא נראה ודינו כדין שלם ואפי׳ בשבת יכול לחברם:
Séif 2: if two whole loaves of one kind, one large and one small — he blesses on the large one. If a person has two half-loaves and has no whole loaf, he joins them together with wood or with something, so that [the break] is not visible, and its law is like that of a whole loaf; and even on Shabbat he may join them.
Large before small, and repairing the whole. Between two whole loaves, one chooses the larger. And two halves, absent a whole loaf, are rejoined (with a wooden pick…) so the break no longer shows: the whole becomes "like a whole loaf," even on Shabbat (where the lechem mishneh requires whole loaves).
Séif 3 — גלוסקאות דבוקות: loaves stuck together in baking
שני גלוסקאות הדבקים יחד שנאפו ונחתך מן האחת והשניה נשארה שלימה טוב להפריד החתיכה מהשלימה כדי שתהא נראית שלימה ממה שיניחנה דבוק בה אע״פ שנראית יותר גדולה: הגה ולא יבצע ממנה במקום שהיתה דבוקה בחבירתה ששם נראית כפרוסה רק יבצע ממקום השלם שבה: [מהרי״ל]:
Séif 3: two rolls (gluska'ot) stuck together in baking, of which one was cut and the other remained whole — it is better to separate the cut piece from the whole one so that it appears whole, rather than leaving it attached, even though it then appears larger. Gloss of the Rama: and he should not break from it at the spot where it was attached to its neighbor, for there it looks like a slice, but he should break from the whole part of it. [Maharil]
Make it appear whole. Two loaves fused in baking: better to detach the cut piece, so the remaining loaf looks whole, rather than keep the larger but breached whole — the appearance of wholeness prevails over size. And one breaks from the full part, not from the joint that looks like a slice.
B. מין ז׳, פת נקיה ופת עכו״ם — the species, fine bread, the bread of a non-Jew
Séif 4 — שעורין וכוסמין, נקיה וקיבר: the seven species and fine bread
פת שעורין ופת כוסמים יברך על של שעורים כיון שהוא ממין ז׳ אף על פי שהכוסמין יפים פת נקיה ופת קיבר מברך על הנקיה ואם שתיהן נקיות וזו לבנה יותר מזו מברך על הלבנה יותר:
Séif 4: barley bread and spelt bread — he blesses on the barley one, since it is of the seven species (מין ז׳), even though the spelt is finer. Fine bread and coarse bread — he blesses on the fine one. And if both are fine and one is whiter than the other, he blesses on the whiter one.
The nobility of the species, then fineness. Barley is named explicitly in the verse of the seven species (ארץ חטה ושעורה): it precedes spelt, even the finer spelt. Otherwise, at equal species, one prefers the fine bread (נקיה), and between two fine loaves, the whiter — quality guides precedence.
Séif 5 — פת עכו״ם: the bread of a non-Jew
פת עכו״ם נקיה ופת קיבר של ישראל אם אינו נזהר מפת עכו״ם מברך על איזה מהם שירצה ואם הוא נזהר מפת עכו״ם מסלק פת נקי של עכו״ם מעל השלחן עד לאחר ברכת המוציא ואם ב״ה אינו נזהר מפת עכו״ם ואין דעתו לאכול כל הסעודה רק פת עכו״ם כי היא נקיה אבל בני ביתו יאכלו מפת שאינו נקי של ישראל ושתי הלחם מונחים על השלחן צריך לבצוע על פת נקיה של עכו״ם הואיל והוא הבוצע ואין דעתו לאכול אלא מאותו פת … הגה ודוקא שחביב עליו אותו פת אבל אם אינו חביב עליו בלא איסור פת של עכו״ם אינו צריך להקדימו: (תרומת הדשן סימן ל״ב):
Séif 5: fine bread of a non-Jew (פת עכו״ם) and coarse bread of a Jew — if one is not scrupulous about pat akum, one blesses on whichever he wishes. And if one is scrupulous about it, he removes the non-Jew's fine bread from the table until after the blessing of the המוציא. And if the master of the house is not scrupulous about pat akum, and intends to eat the whole meal only from the non-Jew's bread because it is fine, while the members of his household will eat from the Jew's bread that is not fine, and both breads are placed on the table — he must break on the fine bread of the non-Jew, since he is the one breaking and he intends to eat only from that bread. Gloss of the Rama: and this only when that bread is beloved to him; but if it is not more beloved to him — apart from the prohibition of the non-Jew's bread — he need not give it precedence.
Fineness yields to scruple. The non-Jew's fine bread would be "better," hence prior; but one who abstains from pat akumremoves it from the table until after the blessing, so as not to bless on it. One who does not abstain breaks on the bread he actually eats (so the fine one, if it is his). The Rama: the whole precedence of the fine bread applies only if it is truly beloved to him.
C. פת הבאה בכיסנין וקביעות סעודה — the cake-bread
פַּת הַבָּאָה בְכִיסָנִין — a special "bread" (filled pastry, dough kneaded with honey/oil, or a dry cracker one nibbles): one does not usually make a meal of it, so its basic blessing is בורא מיני מזונות, and after it the ברכה מעין שלש (the one-blessing summary of the three). But if it becomes a real meal through quantity (קביעות סעודה), it reverts to המוציא.
Séif 6 — mezonot or hamotzi: the קביעות סעודה
פת הבאה בכיסנין מברך עליו בורא מיני מזונות ולאחריו ברכה מעין שלש ואם אכל ממנו שיעור שאחרים רגילים לקבוע עליו אע״פ שהוא לא שבע ממנו מברך עליו המוציא וברכת המזון ואם מתחלה היה בדעתו לאכול ממנו מעט וברך בורא מיני מזונות ואחר כך אכל שיעור שאחרים קובעים עליו יברך עליו ברכת המזון אע״פ שלא ברך המוציא תחלה ואם אכל שיעור שאחרים אין קובעים עליו אע״פ שהוא קובע עליו אינו מברך אלא בורא מיני מזונות וברכה אחת מעין שלשה דבטלה דעתו אצל כל אדם:
Séif 6: on pat haba'a bekisnin one recites "בורא מיני מזונות" and after it the berakha me'ein shalosh. And if he ate of it a quantity that others customarily make the basis of a meal (קובעים), even though he himself was not sated from it — he recites the המוציא and Birkat haMazon. And if from the start he intended to eat a little of it and recited "בורא מיני מזונות," then ate a quantity that others establish as a meal — he recites Birkat haMazon, even though he did not first say the המוציא. And if he ate a quantity on which others do not establish a meal, even though he himself establishes a meal on it — he recites only "בורא מיני מזונות" and a berakha me'ein shalosh, for his intention is nullified relative to all people (בטלה דעתו אצל כל אדם).
Quantity, not satiety, decides. By default, the cake-bread is mezonot. But if one eats the quantity of a real meal — measured by what "people" establish as a meal, not by one's own hunger — it becomes המוציא / Birkat haMazon, even without prior netilat yadayim. The measure is objective: the individual's private decision (בטלה דעתו) does not change the blessing.
Séif 7 — גדר פת הבאה בכיסנין: the three definitions
פת הבא בכיסנין יש מפרשים פת שעשוי כמין כיסים שממלאים אותם דבש או סוקר ואגוזים ושקדים ותבלין … וי״א שהיא עיסה שעירב בה דבש או שמן או חלב או מיני תבלין ואפאה והוא שיהיה טעם תערובת המי פירות או התבלין ניכר בעיסה … וי״מ שהוא פת בין מתובלת בין שאינה מתובלת שעושים אותם כעבים יבשים וכוססין אותם … והלכה כדברי כלם שלכל אלו הדברים נותנים להם דינים שאמרנו בפת הבאה בכסנין:
Séif 7: pat haba bekisnin — some explain: a bread made like pockets (kisim) that one fills with honey or sugar, nuts, almonds and spices. And some say: a dough into which one mixed honey, oil, milk or spices, then baked, provided the taste of the mixture of fruit-juice or spices is discernible in the dough. And some explain: a bread — whether spiced or not — that one makes like thin dry crackers and nibbles. And the halakha is like the words of all: to all these one gives the laws we stated regarding pat haba'a bekisnin.
Three forms, one law. Pat haba'a bekisnin covers three realities: the filled pastry, the dough kneaded with honey/oil/spices (whose taste is discernible), and the dry cracker one nibbles. The Choulhan Aroukh rules "like all of them" (הלכה כדברי כלם): each receives the mezonot / kevi'ut rule of séif 6.
Séif 8 — לחמניות: thick batter and liquid batter
לחמניות אותן שבלילתן עבה שקורין אובליא״ש לחם גמור הוא ומברך עליו המוציא וברכת המזון ואותן שבלילתן רכה ודקין מאוד שקורין ניבלא״ש מברך עליהם בורא מיני מזונות וברכה אחת מעין שלש ואם קבע סעודתו עליהם מברך המוציא וברכת המזון ואי אכיל להו בתוך הסעודה שלא מחמת הסעודה טעונים ברכה לפניהם ולא לאחריהם:
Séif 8: small loaves (lachmaniyot) whose batter is thick, called "oblias" — it is full bread, and one recites the המוציא and Birkat haMazon. And those whose batter is soft and very thin, called "niblas" — one recites "בורא מיני מזונות" and a berakha me'ein shalosh; and if he made his meal of them (קבע סעודתו), he recites the המוציא and Birkat haMazon. And if he eats them within the meal, not on account of the meal, they require a blessing before them but not after.
The thickness of the batter decides. Thick batter ("oblias") = full bread (hamotzi). Soft and very thin batter ("niblas") = mezonot, unless there is kevi'ut se'uda. And eaten during the meal as an extra (not for the meal), they need a blessing before, and Birkat haMazon covers them after.
D. כזית ותואר לחם — the kezayit and the "form of bread"
תּוֹאַר לֶחֶם — the "form of bread": the appearance by which a piece remains recognizable as bread. כְּזַיִת — the measure of an "olive." These two criteria govern the blessing of crumbled, boiled or soaked bread: as long as there is a כזית of piece or the form of bread remains, the status of "bread" (and hence the המוציא) may endure.
Séif 9 — פחות מכזית: less than a kezayit
פת גמור אפי׳ פחות מכזית מברך עליו המוציא אבל לאחריו אינו מברך כלום כל שלא אכל כזית:
Séif 9: full bread — even less than a kezayit — one recites the המוציא on it; but afterward one recites nothing as long as one has not eaten a kezayit.
Before and after do not follow the same rule. Full bread remains bread even in a minimal quantity: the blessing before (hamotzi) is due as soon as one eats. But the blessing after (Birkat haMazon) is due only from a כזית actually eaten.
Séif 10 — חביצה: agglomerated crumbs
חביצה דהיינו פרורי לחם שנדבקים יחד ע״י מרק אם נתבשל אם יש בהם כזית אף על פי שאין בו תואר לחם מברך המוציא וברכת המזון ואם אין בהם כזית אף על פי שנראה שיש בו תואר לחם אינו מברך אלא בורא מיני מזונות וברכה אחת מעין שלש ואם אינו מבושל אלא שהוא מחובר על ידי דבש או מרק אם יש בפרוסות כזית מברך עליו המוציא אפילו אין לו תואר לחם ואם אין בהם כזית אם יש בהם תואר לחם מברך עליו המוציא וברכת המזון ואם אין בהם תואר לחם מברך בורא מיני מזונות וברכה אחת מעין שלש:
Séif 10: chavitza, i.e. bread crumbs agglomerated by broth: if it was cooked — if there is a kezayit in them, even if it has no form of bread, one recites the המוציא and Birkat haMazon; and if there is no kezayit, even if it seems to have a form of bread, one recites only "בורא מיני מזונות" and a me'ein shalosh. And if it was not cooked but only joined by honey or broth: if there is a kezayit in the slices, one recites the המוציא even without form of bread; and if there is no kezayit — if there is a form of bread, hamotzi and Birkat haMazon, and if there is no form of bread, "בורא מיני מזונות" and a me'ein shalosh.
Two criteria: the kezayit or the form of bread. For agglomerated crumbs, cooking weakens the status of bread — then only a כזית of piece maintains it (hamotzi). Without cooking (mere joining), a כזיתor a retained "form of bread" suffices to stay hamotzi. Lacking both: mezonot.
Séif 11 — פירורין במים: crumbs in water
יש מי שאומר דפירורין שנותנין במים והמים מתלבנים מחמת הפירורין אזל ליה תוריתא [פי׳ כאלו אמר תואריתא כלומר תואר הלחם] דנהמא ואין מברך עליה אלא בורא מיני מזונות וברכה אחת מעין שלש:
Séif 11: there is one who says that crumbs placed in water, and the water turns white because of the crumbs — the "form of the bread" (torita de-nahama, i.e. the appearance of bread) has departed, and one recites on it only "בורא מיני מזונות" and a berakha me'ein shalosh.
When the "form" dissolves. Crumbs that dissolve their substance in water (to the point of whitening it) have lost their "form of bread" (אזל תוריתא דנהמא): it is no longer bread, but mezonot.
Séif 12 — פת השרוי ביין: bread soaked in wine
יש מי שאומר שפת השרוי ביין אינו מברך אלא בורא מיני מזונות וברכה אחת מעין שלש ונראה שאין דבריו אמורים אלא בפירורין או בפרוסות שאין בכל אחת כזית:
Séif 12: there is one who says that bread soaked in wine — one recites only "בורא מיני מזונות" and a berakha me'ein shalosh; and it seems that his words apply only to crumbs or slices in each of which there is not a kezayit.
The kezayit reservation. Bread soaked in wine would pass to mezonot; but the Choulhan Aroukh limits this view to crumbs or small pieces without a kezayit. A piece of at least a כזית that keeps its form remains hamotzi.
E. עיסה שבשלה או טגנה — dough cooked, fried or baked in an oven
Séif 13 — בשלו או טגנו: the importance of the moment of baking
אפילו דבר שבלילתו (פירוש לישת הקמח במים) עבה אם בשלו או טגנו אין מברך עליה המוציא אפי׳ שיש עליה תוריתא דנהמא ואפי׳ נתחייבה בחלה דברכת המוציא אינו הולך אלא אחר שעת אפייה ויש חולקין ונהגו להקל וירא שמים יצא ידי שניהם ולא יאכל אלא ע״י שיברך על לחם אחר תחלה: הגה כל זה לא מיירי אלא בדאית ביה לאחר אפייה תואר לחם אבל אי לית ביה תואר לחם כגון לאקשי״ן ורימזלי״ך לכ״ע אין מברכין עליהם המוציא ולא ג׳ ברכות דלא מיקרי לחם אבל פשטיד״א וקרעפליך מקרי תואר לחם ואין לאכלם אא״כ בירך על שאר הפת תחלה:
Séif 13: even something whose batter is thick (i.e. the kneading of flour in water) — if one cooked it [in water] or fried it, one does not recite the המוציא on it, even if it has the appearance of bread (תוריתא דנהמא), and even if it became liable to challah; for the blessing of the המוציא follows only the moment of baking in an oven (שעת אפייה). And there are those who disagree; the custom is to be lenient, and the God-fearing one satisfies both views and eats it only by first blessing on other bread. Gloss of the Rama: all this speaks only of what has, after baking, the appearance of bread; but what has no appearance of bread, such as "lokshin" (noodles) and "rimzlich," all agree one recites neither the המוציא nor the three blessings on them, for it is not called bread. But "pashtida" and "kreplach" are considered to have the appearance of bread, and one does not eat them unless one first blessed on other bread.
The המוציא follows the oven, not the dough. Bread dough cooked in water or fried loses the status of bread — even if it keeps the appearance of bread — for only the moment of baking in an oven (שעת אפייה) fixes the hamotzi. In the face of the dispute, the lenient practice is to eat it within a bread meal. With no appearance of bread at all (noodles), all agree: it is not bread.
Séif 14 — חלוט שאפאו בתנור: scalded then baked in the oven
חלוט [פי׳ כמין פת חולטין אותו ברותחין] שאחר כך אפאו בתנור פת גמור הוא ומברך עליו המוציא: הגה וכן דבר שבלילתו רכה שאפאו בתנור בלא משקה דינו כפת ומברך עליו המוציא ושלש ברכות וכן אם אפאו באלפס בלא משקה ומעט משקה שמושחין בו האלפס שלא ישרוף העיסה לא מקרי משקה אבל דבר שבלילתו רכה וטגנו במשקה לכ״ע לאו לחם הוא:
Séif 14: chalut [a kind of bread that one scalds in boiling water] which one then baked in the oven — it is full bread, and one recites the המוציא on it. Gloss of the Rama: likewise something whose batter is soft that one baked in the oven without liquid — its law is like bread, and one recites the המוציא and the three blessings on it; and likewise if one baked it in a pan (alpas) without liquid; and the little liquid with which one greases the pan so the dough does not burn is not considered a liquid. But something whose batter is soft and one fried it in liquid — all agree it is not bread.
Baking in a dry oven "makes" the bread. Even scalded first, a dough finally baked in the oven is full bread. The decisive criterion: baking without liquid (oven, or a barely greased pan) = bread; frying in a liquid = not bread. The thin film of oil that prevents burning does not count as liquid.
F. טרוקנין, נהמא דהנדקא ופשטידה — the other forms of baking
Séif 15 — טרוקנין וטריתא: baked in a hollow or poured on the fire
טרוקנין דהיינו שעושין גומא בכירה ונותנים בה קמח ומים מעורבין בה ונאפה שם מברך עליו בורא מיני מזונות וברכה אחת מעין שלש ואם קבע סעודתו עליו מברך המוציא וברכת המזון אבל טרית״א דהיינו שלוקחין קמח ומים ומערבין אותם ושופכין על הכירה והוא מתפשט ונאפה אין עליו תורת לחם כלל ואין מברכין עליו אלא בורא מיני מזונות וברכה אחת מעין שלש ואפי׳ קבע סעודתו עליו:
Séif 15: "trokanin," i.e. that one makes a hollow in the stove and puts in it flour and water mixed together, and it bakes there — one recites "בורא מיני מזונות" and a berakha me'ein shalosh; and if he made his meal of it (קבע סעודתו), he recites the המוציא and Birkat haMazon. But "trita," i.e. that one takes flour and water, mixes them and pours [them] onto the stove, and it spreads and bakes — it has no status of bread at all, and one recites on it only "בורא מיני מזונות" and a berakha me'ein shalosh, even if he made his meal of it.
Two nearby bakings, two statuses. The trokanin (dough baked in a hollow of the stove) keeps enough "bread": mezonot, but hamotzi by kevi'ut se'uda. The trita (liquid batter poured and spread on the fire) has no status of bread at all: always mezonot, even if one makes a meal of it.
Séif 16 — נהמא דהנדקא: baked on a spit or in the sun
נהמא דהנדקא והוא לחם שאופין בשפוד ומושחין אותו בשמן או במי ביצים וכן לחם העשוי לכותח שאין אופין אותו בתנור אלא בחמה מברך עליו בורא מיני מזונות:
Séif 16: "nahama dehindeka," which is bread baked on a spit (shpoud) and greased with oil or egg-water; and likewise bread made for kutach, which is not baked in an oven but in the sun — one recites on it "בורא מיני מזונות."
No real oven, no real bread. Bread baked on a spit (brushed with oil or egg) or in the sun lacks the baking of real bread: its blessing is בורא מיני מזונות, not the hamotzi.
Séif 17 — פשטידה: the pie baked in the oven
פשטיד״ה הנאפת בתנור בבשר או בדגים או בגבינה מברך עליה המוציא וברכת המזון: הגה ודוקא שאפאו בתנור בלא משקה אבל אפאו במחבת במשקה אין לברך עליו ואין לאכלו רק תוך הסעודה כמו שנתבאר:
Séif 17: the "pashtida" baked in the oven with meat, fish or cheese — one recites on it the המוציא and Birkat haMazon. Gloss of the Rama: and this only when one baked it in the oven without liquid; but if one baked it in a pan with liquid, one does not recite on it, and one eats it only within a meal, as was explained.
The filling does not change the law of the oven. A pie (pashtida) baked in the oven without liquid — even filled with meat, fish or cheese — remains bread: hamotzi and Birkat haMazon. But baked in a pan in liquid, it loses this status: one eats it within a bread meal, without its own blessing.

Practical cases
Case 1 — A large challah and small loaves
Situation: on the table I have a whole loaf (even a bit coarse) and fine slices of fine bread. On which do I make the המוציא?
Conduct: at equal species, one recites on the whole loaf (על השלם), even coarser and smaller than the pieces (séif 1). If there are two whole loaves, one takes the larger (séif 2). And if the piece is of a nobler species (wheat against a whole barley loaf), one places the slice under the whole one and breaks both. For a matter of honor or a precise custom, one follows one's Rav.
Case 2 — Cake or bread: which blessing?
Situation: I am eating a pastry (dough with honey, or a filled cake). Is it mezonot or hamotzi? And if I make a whole meal of it?
Conduct: the פת הבאה בכיסנין first takes בורא מיני מזונות (and me'ein shalosh after). But if one eats the quantity of a real meal — measured by what people establish, not by one's hunger — it becomes המוציא / Birkat haMazon (séif 6). The practical measures (how much makes a "meal") are taken from one's Rav.
Case 3 — The bread of a non-Jew on the table
Situation: on the table there is a fine loaf bought from a non-Jew and a coarser loaf from a Jew. I abstain from pat akum. On which do I bless?
Conduct: one who abstains from פת עכו״םremoves the non-Jew's fine bread from the table until after the blessing, then blesses on the Jew's bread (séif 5). One who does not abstain blesses on the one he intends to eat. For the details of pat akum (pat palter, etc.), one follows one's Rav.
