1. The Text of the Shulchan Aruch
Siman ש״כ contains 20 seifim of the Mechaber codifying the halachos of sechitah (squeezing) on Shabbos.
Seif 1 — Which Fruits May Be Squeezed
דיני סחיטה בשבת. ובו כ סעיפים:
זיתים וענבים אסור לסחטן [ע״ל סי' רנ״ב סעיף ה'] ואם יצאו מעצמן אסורים אפי' לא היו עומדים אלא לאכילה ותותין ורמונים אסור לסחטן ואם יצאו מעצמן אם עומדים לאכילה מותר ואם עומדים למשקים אסור ושאר כל הפירות מותר לסחטן: הגה ובמקום שנהגו לסחוט איזה פירות לשתות מימיו מחמת צמא או תענוג דינו כתותים ורמונים אבל אם נהגו לסחטו לרפואה לבד אין לחוש [ב״י] וכל זה דוקא לסחוט אסור אבל מותר למצוץ בפיו מן הענבים המשקה שבהן וכ״ש בשאר דברים [ב״י בשם שבולי לקט] ויש אוסרין למצוץ בפה מענבים וכיוצא בהם [הגהות מיימוני פכ״א]:
- Olives and grapes: forbidden to press — and what comes out of itself is forbidden, even if they stood only to be eaten.
- Mulberries and pomegranates: forbidden to press; what comes out of itself — permitted if they stand for eating, forbidden if they stand for drinks.
- All other fruits: permitted to press. Rama: where the custom is to press some fruit to drink its juice, from thirst or from pleasure, its law is that of mulberries and pomegranates; pressed for medicine alone, there is nothing to fear. And all this only of pressing: to suck the liquid from the grape itself is permitted — and some forbid it.
Seif 2 — Olives & Grapes Crushed Before Shabbos
זתים וענבים שנתרסקו מערב שבת משקים היוצאים מהם מותרים ואפילו אם לא נתרסקו מע״ש אם יש יין בגיגית שהענבים בתוכה אף ע״פ שהענבים מתבקע בשבת בגיגית מותר לשתותו בשבת שכל יין היוצא מהענבים מתבטל ביין שבגיגית:
- Olives and grapes crushed before Shabbat: the liquids that issue from them are permitted.
- And even if not crushed on the eve: if there is wine in the vat holding the grapes — though the grapes burst on Shabbat, it is permitted to drink.
- For all the wine issuing from the grapes is nullified in the wine of the vat.
Seif 3
חרצנים וזגים שנתן עליהם מים לעשות תמד מותר למשוך מהם ולשתותם ואפילו לא נתן מים והיין מתמצה וזב מאליו מותר לשתותו:
- Skins and pips on which water was put to make תמד: permitted to draw from them and drink.
- And even if no water was put, and the wine oozes and flows of itself — permitted to drink it.
Seif 4
מותר לסחוט אשכול ענבים תוך קדירה שיש בה תבשיל כדי לתקן האוכל דהוי ליה משקה הבא לאוכל וכאוכל דמי אבל אם אין בה תבשיל אסור:
- Permitted to press a cluster of grapes into a pot that holds a dish, so as to improve the food.
- For it is a liquid coming into food, and it is as food.
- But if there is no dish in it — forbidden.
Seif 5
יש מי שאומר דהוא הדין לבוסר שמותר לסחטו לתוך האוכל ור״ת אוסר בבוסר [הואיל ואינו ראוי לאכילה] [טור]:
- There is one who says the same of unripe grapes — permitted to press them into the food.
- And Rabbenu Tam forbids unripe grapes — Rama: since they are not fit to be eaten.
Seif 6
מותר לסחוט לימוני״ש:
- Permitted to squeeze lemons — מותר לסחוט לימוני״ש.
- The seif is brief and sets no condition. It is to be read with the Rama's gloss on seif א — ובמקום שנהגו לסחוט איזה פירות לשתות מימיו מחמת צמא או תענוג דינו כתותים ורמונים — whose bearing on today's lemon is for the Rav to determine.
Seif 7
לסחוט כבשים [פי' פירות ומיני ירקות המונחים בחומץ ובמלח כדי שלא ירקבו] ושלקות אם לגופם שאינו צריך למים ואינו סוחטן אלא לתקנם לאכילה אפילו סוחט לתוך קערה שאין בה אוכל מותר ואם צריך למימיהן מותר לסחוט לתוך קדירה שיש בה אוכל אבל אם אין בה אוכל אסור ולר״ח כל שהוא צריך למימיהן חייב חטאת אפילו סחט לקדירה שיש בה אוכל [ולדבריו הסוחט אשכול לקדירה נמי אסור] [טור]:
- Pressing pickled and cooked vegetables — if for their own body, needing no water and pressing only to prepare them for eating: permitted, even into a bowl holding no food.
- If he needs their liquid: permitted to press into a pot that holds food; but if it holds none — forbidden.
- And per Rabbenu Chananel: whenever he needs their liquid — he is liable a חטאת, even pressing into a pot that holds food. Rama: and by his words, pressing the cluster into the pot is likewise forbidden.
Seif 8
הסוחט דג לצירו דינו כסוחט כבשים ושלקות למימיהן:
- One who presses a fish for its brine — its law is that of pressing pickled and cooked vegetables for their liquid.
Seif 9
השלג והברד אין מרסקין אותם דהיינו לשברם לחתיכות דקות כדי שיזובו מימיו אבל נותן הוא לתוך כוס של יין או מים והוא נימח מאיליו ואינו חושש וכן אם הניחם בחמה או כנגד המדורה ונפשרו מותרים:
- Snow and hail: one does not crush them — that is, break them into fine pieces so their water runs off.
- But he puts them into a cup of wine or water and it melts of itself — and he need not be concerned.
- And likewise if he set them in the sun or before the hearth and they melted — permitted.
Seif 10
מותר לשבר הקרח כדי ליטול מים מתחתיו:
- Permitted to break the ice in order to take the water beneath it.
Seif 11
צריך ליזהר בחורף שלא יטול ידיו במים שיש בהם שלג או ברד ואם יטול יזהר שלא ידחקם בין ידיו שלא יהא מרסק:
- One must take care in winter not to wash his hands in water holding snow or hail.
- And if he washes: let him take care not to press them between his hands — lest it be crushing.
Seif 12
יש ליזהר שלא ישפשף ידיו במלח:
- One should take care not to rub his hands with salt.
Seif 13
דורס שלג ברגליו ואינו חושש:
- He treads on snow with his feet and need not be concerned.
Seif 14
הר״מ מרוטנבור״ג מתיר להטיל מי רגלים בשלג והרא״ש היה נזהר:
- The Maharam of Rothenburg permits urinating on snow — and the Rosh was careful.
- The seif brings both practices and does not decide between them.
Seif 15
אסור לפרוס סודר על פי החבית וליתן על גביו הכלי שדולים בו שמא יבא לידי סחיטה אבל בגד העשוי לפרוס עליו מותר שאינו חושש עליו לסחטו:
- Forbidden to spread a cloth over the mouth of the barrel and set on it the vessel one draws with — lest he come to squeeze.
- But a garment made to be spread over it — permitted, for he is not concerned about it to squeeze it.

אסור להדק מוכין בפי פך שיש בו משקין משום סחיטה:
- Forbidden to pack stuffing into the mouth of a jug holding liquids — because of squeezing.
Seif 17
ספוג אין מקנחין בו אלא אם כן יש בו בית אחיזה גזירה שמא יסחוט:
- A sponge: one does not wipe with it — unless it has a handhold.
- A decree, lest he squeeze.

חבית שפקקו בפקק של פשתן לסתום נקב שבדפנה שמוציאין בו היין יש מי שמתיר להסירו ואף ע״פ שאי אפשר שלא יסחוט והוא שלא יהא תחתיו כלי דכיון שאינו נהנה בסחיטה זו הוי פסיק רישא [פי' איסור נמשך בהכרח מדבר מה כמו המות הנמשך בהכרח מהתזת הראש] דלא ניחא ליה ומותר וחלקו עליו ואמרו דאע״ג דלא ניחא ליה כיון דפסיק רישא הוא אסור והעולם נוהגים היתר בדבר ויש ללמד עליהם זכות דכיון שהברזא ארוכה חוץ לנעור' ואין יד מגעת לנעור' מותר מידי דהוי אספוג [פי' הערוך ספוג הוא על ראש דג אחד גדול שבים ובשעה שמרים ראשו להסתכל בעולם יורד אותו הספוג על עיניו ואינו רואה כלום ולולי זה לא היתה ספינה ניצולת מפניו] שיש לו בית אחיזה ולפי שאין טענה זו חזקה ויש לגמגם בה טוב להנהיגם שלא יהא כלי תחת החבית בשעה שפוקקים הנקב [וע״ל סי' ש״א עוד מדיני סחיטה]:
- A barrel stopped with a flax plug — there is one who permits removing it, though it is impossible that it not squeeze, provided no vessel is beneath it: since he takes no pleasure in this squeezing it is a פסיק רישא דלא ניחא ליה.
- And they disputed him and said: even though it does not please him, since it is a פסיק רישא — forbidden.
- And the world practises leniency in the matter, and there is merit to plead for them: the spigot being long, past the flax, the hand does not reach the flax — as with a sponge that has a handhold. And since this argument is not strong and one may stammer over it, it is good to accustom them that no vessel be under the barrel when the hole is plugged.
Seif 19
ליתן כרכום בתבשיל מותר ואין לחוש לו משום צובע דאין צביעה באוכלים:
- To put saffron in a cooked dish — permitted, and there is no fear of dyeing.
- For there is no dyeing in foods.
Seif 20
יש מי שאומר שהאוכל תותים או שאר פירות הצבועי' צריך ליזהר שלא יגע בידיו צבועות בבגדיו או במפה משום צובע אבל אם צובע פתו במשקה הפירות לית לן בה דאין צביעה באוכלין:
- There is one who says that he who eats mulberries or other colouring fruits must take care — not to touch his dyed hands to his clothes or to a napkin — because of dyeing.
- But if he dyes his bread with the fruits' juice — we have nothing against it: for there is no dyeing in foods.
2. The General Context — the Melocho of Sechitah
What does this siman discuss?
Siman ש״כ deals with the melocho of סחיטה (sechitah — squeezing, extracting liquid from a solid). It is not an independent av melocho: it is a toldah (derivative) — depending on the case, of דש (threshing) or of מלבן (laundering).
- Squeezing a fruit for juice = toldah of dash / mefarek ("detaching" — extracting the liquid-food from the solid-food).
- Wringing a wet cloth = toldah of melaben (laundering — see siman 302). The same gesture, two melochos.
- Olives and grapes: squeezing = assur mid'oraisa (their primary use is juice/oil).
- Mulberries and pomegranates: assur mid'rabbanan (sometimes pressed for juice).
- Other fruits (orange, lemon for most cases): permitted to squeeze — except where the custom is to press them for drinking.

Siman ש״כ closes the "food melochos" block (318 cooking, 319 selecting, 320 squeezing). It also crosses siman 302 (wringing clothing), as sechitah is there a toldah of melaben.

6. The Position of the Rama
- Seif 1 — Where the local custom is to squeeze certain fruits to drink their juice (for thirst or pleasure), they take the status of mulberries and pomegranates — assur mid'rabbanan.
- Seif 1 — If the custom is to squeeze them only for medicine → no concern (no sechitah issur).
- Seif 1 — Sucking juice with the mouth: the Rama cites the opinion that forbids it for grapes (Hagahos Maimoniyos) — hence Ashkenazi caution.
- Mechaber → fruit status depends on its "universal" use.
- Rama → takes local use into account; caution on sucking.
- Chabad → Shulchan Aruch HaRav siman ש״כ.
