When it is no longer the wine that is judged but the work done around it: hiring out oneself, one’s beast, boat and cellar, money ground and produce burnt, the flask set on the donkey, a hundred barrels for a hundred perutot, the pledge taken from one who works for free, the server, the interpreter and the crier, guarding for free and the barrels one is paid to smash (Shulchan Arukh, Yoreh De'ah 133 — 7 seifim)
כשם שאסור למכור סתם יינם וליהנות בו כך אסור להשתכר בו
Just as it is forbidden to sell stam yeinam and to derive benefit from it, so too it is forbidden to earn wages from it. The siman’s first sentence gives its full measure: it is no longer the wine that is at issue, but what one earns beside it.

Hebrew text of the 7 seifim with a fluent English translation. The wage for work done on the wine, the money one grinds and the produce one burns, the flask set on the rented donkey, the two contract wordings, the pledge, the server and the interpreter, guarding for free and the smashed barrels — explained step by step with concrete examples.
In-depth pilpul: the chakira between an extension of the prohibition and a קנס, the gedar of destruction between grinding and removal, the Taz against the Beit Yosef on the cemetery, the Bach against the Shach on a wage taken in advance, the Raavad/Ramban machloket on the remedy for the single barrel, and the Rashba’s proof from מכוש אחרון.
Master tables of the seven seifim, the three reflex questions, the fate of what was received, the two contract wordings, the Shach/Taz machloket, six golden rules, the « ש.כ.ר » mnemonic and five classic traps.
The practical halakhah per the ש״ך, the ט״ז, the באר היטב and the פתחי תשובה, then contemporary cases — haulage, warehousing, service, disposal of a stock. Note: the Admour HaZaken did not write a Shulchan Arukh on Yoreh De'ah — a level of psak, not “Daat HaRav”.
Why is the wage for work done on forbidden wine itself forbidden?
Because this is not a rule about money but a penalty against a man. The Gemara proposes two grounds and dismisses them one after the other, before concluding: « קְנָס הוּא שֶׁקָּנְסוּ חֲכָמִים בַּחֲמָרִין וּבְיֵין נֶסֶךְ » (עבודה זרה ס״ב ע״א). The Shach opens his commentary on this, to dismiss the reading that would make the sabbatical year the model: « כלומר דל״ת כדקס״ד מעיקרא דש״ס ר״פ בתרא דעבודת כוכבים דהוי בעי למימר דיי״נ דמי לשביעית דמכירה אסור ושכרו מותר אלא לא דמי לשביעית אלא משום קנס החמירו ביי״נ דשכרו ג״כ אסור כדמסיק ש״ס התם » (ש״ך יו״ד קל״ג ס״ק א). Does a flask of wine on the rented donkey make the wage forbidden?
No, and that is seif 2: « השכיר לו חמורו לרכוב עליו אע״פ שהניח לגינו של יין עליו או שהשכיר לו ספינתו להוליך בה סחורתו אף ע״פ שנותן בה גם מאכליו ומשקיו שכרו מותר כיון שעיקר השכירות לא היה בשביל יין נסך » (שו״ע יו״ד קל״ג:ב). The Shach supplies the test: « אע״ג דמן הדין יכול להניח עליו לגינו אפ״ה הואיל שאם לא הניח עליו לגינו אינו יכול לומר לו נכה לי משכר הלגין הרי הוא כאלו לא שכרו לכך. ש״ס » (ש״ך יו״ד קל״ג ס״ק ה). In other words: would the price drop if the wine were not there? For application to your own situation, consult your Rav.
A hundred barrels, one of them wine: can anything be saved?
The Mehaber forbids the whole wage under a lump contract. On the remedy the Shach is clear: « ולא מהני הולכת הנאה לים המלח כדלקמן סימן קל״ד דהכא כיון שקבלנות היא כולי אגרא אחדא וחדא יהיב ליה וגם אפשר שאלו הודיעו מתחלה שאין מעביר לו אותו חבית שמא לא היה שוכרו כלל כן הסכימו רוב הפוסקים וכ״פ ב״י והאחרונים » (ש״ך יו״ד קל״ג ס״ק ו). The Taz allows a remedy, but only after receipt — a minority position. For application to your own situation, consult your Rav.
Does working for free put one in the clear?
No: « היה עושה עמו ביין בחנם ממשכנים מנכסיו כנגד שכרו » (שו״ע יו״ד קל״ג:ד). The Taz gives the two possible characterisations: « פירוש הב״ד יקחו ממנו משכון בעבור הנאתו שיחזיק לו העובד כוכבים טובה על זה וכתב רש״ל קנסא בעלמא הוא » (ט״ז יו״ד קל״ג ס״ק ח). How far does the Rama’s leniency for our age reach?
The Rama writes: « ועיין לעיל סימן קכ״ג דבזמן הזה מקילין לענין היתר הנאה מסתם יינם ולכן אין להחמיר באלו הדינים רק ביין נסך גמור » (רמ״א יו״ד קל״ג:א). But the Shach at once sets the limit: « מיהו לכתחלה ודאי אין להשכיר עצמו או ביתו וכליו לסתם יינם וכן כתב ב״י בשם א״ח בשם מהר״מ ע״ש » (ש״ך יו״ד קל״ג ס״ק ד), and the Pitchei Teshuva brings the Radbaz, stringent even with stam yeinam as to serving: « עבה״ט של מהרי״ט ז״ל ועיין בתשובת הרדב״ז ח״א סימן כ״ב שכתב דראוי להחמיר אף בסתם יינם עיין שם » (פת״ש יו״ד קל״ג ס״ק א). For application to your own situation, consult your Rav.
Why does seif 7 permit what seif 6 forbids?
Because it is not the wish that is judged, but what it is aimed at.
